That's great! you are most welcome! this is actually one of the favorite sweets for me also! the most important while cooking dont use more semolina 1 cup milk 1/2 cup caster sugar 1 cup fine semolina 450 g mozzarella cheese 1 tablespoon rose water 1 tablespoon orange blossom water

hi Marta, you need to add a thick cooking cream or semi thick to have a soft texture for the filling for 'halawet el jibn' while cooking this dessert be sure to roll it while it is hot ;)

hi Helin, thank you for your feedback. Ashta (or qashta) it is clotted cream cheese, you add sugar and extra cream for silky texture. For substitute will work great mascarpone 👌🌹

sure, fresh cows milk use in both: stuffing and dough. Tip for the dough, it takes you 5-7 minutes(low to medium heat) to melt the cheese into semolina+milk mixture, be sure you are rolling HOT dough. You may use glows.

I forgot to ask, for making the cheese out of milk, you did not add vinegar? many people told me to use vinegar but I can make it without using vinegar like you did?

to make a real ashta ( which is clotted cheese) you need milk and I do use lemon juice (you can use vinegar aswell). Bcz to help to milk break to whey and cheese we need acid. If you use a lemon it should be real sour lemon or vinegar also fine will work. I did it with vinegar few time also.

bcz some recipes of halawet el jibn also using ashta like a caster base. Using milk + corn starch and sugar syrup. For me this version with freshly made ashta cheese tastier. Another tip can be to use store bought mascarpone

Thank you for your presentation. I tried it as described but the cheese after cooked was very sticky. I had to put melted butter on my hand to handle it. After I roll it with the ishta i try to remove it but it is too soft and very sticky. What is wrong with my trial?

Hi, sorry to hear that. @@mounirzaccak7357 there is no much matter to add first milk or melt a cheese first, most important to wait till semolina absorb all the liquid (milk+cheese). if you have some more question please ask, so we can troubleshoot it :) once you caught the right consistency the rest is easy.

Wa Alaikum Assalam. dear Mariam, the Cheddar cheese has tooo strong taste. in halawet el jibn we have to use cheese with more neutral taste like mozzarella or fresh akkawi (without salt) or maybe nabulsi. if you have more question, please ask once you try to make halawet el jibn, use the same size of glass for both milk and semolina 1 cup milk 1/2 cup caster sugar 1 cup fine semolina 450 g mozzarella cheese 1 tablespoon rose water 1 tablespoon orange blossom water

It is version of ashta more "cheesy", there is a way to make it like Milk, corn starch(to make it more thick), blossom water (rose water) and sugar, so you can you less amount of milk.
