हल्दीराम के छोले खाके हमसब सोचते है की काश हम घर में भी ऐसे ही छोले बना सकते। दोस्तों आज मैं चोलो की जो रेसिपी आपके साथ शेयर कर रही हूँ उससे आपके छोले भी बिलकुल हल्दीराम जैसे बनेंगे.
This recipe of Chole will certainly remind you of Haldiram. And if you are fan this recipe is for you. Do try it and let me know how it turned out for you.
Ingredients :
Chickpeas-1.5 cups soaked overnight
For boilingWater-3 cups
Tea bag-3 (tea leaves -2 tsp )
Baking Soda-1 tsp
Green cardamom-2
Cloves-3-4
Black cardamom-2
Bay leaves-2
Cinnamon stick-1
Salt-1 tsp
dry masala-
Coriander powder-2 tbsp
Dry ginger powder-1/2 tsp
Red chilli powder-1 tsp
Kashmiri chilli powder-1 tsp
Kasoori methi-1 tsp
Turmeric powder-1/2 tsp
Anardana powder-2 tbsp
Garam masala-1/2 tsp
Roasted cumin powder-1 tsp
Amla powder-1/2 tsp
Dry mango powder-1 tsp
For masala-
Oil- 2 tbsp
Ghee-2 tbsp
Onion-2 big chopped(3 in case of medium)
Ginger garlic paste-2 tbsp
Tomato puree-2 tomatoes boiled and puréed
Salt-to taste
Tomato ketchup-2 tbsp
For tadka-
Ghee-2 tbsp
Ginger 1 inch finely sliced
Green chilli 3-4 slit
Roasted cumin powder-1 tsp
Kashmiri chilli powder-1 tsp

NAhi nahi bahut thoda sa daala hai ...bahut hi jabardast swad aayega yakin maniye ...pata bhi nahi chalega ki ketchup dala hai

Nahi nahi tea flavour pata bhi nahi chalta ...isme bahut saare masaale pade hain to chai ka swaad bilkul nahi aata ...balki colour bahut achcha aa jata hai :)

No way in 3: whistles this will be cooked perfectly. You need to cook for 45 - 50 minutes on slow flame on gas after 1st whistle. I tried after 6 whistles but were not cooked

Hi thanks a lot for trying the recipe I am glad you liked it. To make it more reach you can add butter to it after masalas are cooked ...cream can not be added in to it as cream will spoil its taste but butter will do the job here :)

I used only half the ingredients suggest by the lady, the chole turned out really tasty. So don't worry if you don't have all the ingredients, just throw in a little bit of whatever you have.

मैडम हल्दीराम में सबसे घटिया छोले बनते हैं। ऊंची दुकान फीका पकवान। हाँ वहां की मिठाई अच्छी है लेकिन छोले बेकार।। आप अपनी इतनी अच्छी डिश को हल्दीराम से compare न करें।।

Hello ..Agar aap dekhe to ketchup kaafi kam daala hai usme vinager hota hai aur uski meethaas se cholo pe koi asar nahi aayega balki ek consistent market jaisa taste aayega ..lekin fir bhi agar aapko doubt ho to aap isko skip kar sakti hain...main aapni daal makhni mein bhi ketchup daalti hoon ...agar aap ek baar usko bhi try karein to aapko taste mein difference jaroor mahsoos hoga ma'am :)

Sir Haldiraam ki recipe secret hai but unke cholo mein lahsoon pyaaz dono use hota hai sir maine khud kai baar poocha hai aur kai baar ghar mein kam se kam 50 tareeko se try karne ke baad ye recipe haldiraam ke bahut close lagti hai ...aap try to karke dekhiye is recipe ko....jaroor pasand aayegi aapko

Is it not possible to reduce use of oil. The picture shows too much of oil.. Very unhealthy.

Definitely Sir ..you can reduce the oil as per your taste and liking ...I have used it on the higher side as i know that this recipe uses a lot of masala and oil and hence it is an occasional dish for sure..

Actually mam mujhe parwal ki sabzi pasand nhi thi but really jab apki Aloo pyaza parwal Dekhi to try kijiye thi bahut lazeez swaad tha Uska Kyun ki aapke hathon me magic hai ek ache restaurant Aur 7 star hotels se bahut hygienic food aap banati hain. The quantity of oil is at cooks discretion ...you can always control and put less oil ..the demonstration of recipe is exactly how it is made in mentioned places

Which Garam Masala did you add here? How much amchur should we add if we don't have anardana. Also we don't add onion garlic so should add more tomatoes to replace the quantity of onions?

Hi...I use homemade garam masala powder (My garam masala powder has badi illaichi, choti illaichi, mace,cinnamon, cloves, star anise and little of nutmeg)...Replace the anardana powder with Amchur in same quantity and double the tomato incase of not using onion and garlic ...hope this is helpfull

Actually sirf tomato purée bhi use kar sakte hain ... purée Dalne se taste consistent aata hai ... koi bhi purée daal sakte hain market ki bhi ya ghar ki bani hui ... aur agar purée handy nahi hai to tamatar ko achche se ubal kar uska chilka utaar kar pees lein isse bhi kaam ho jayega 😊

Sir The colours in chole can be gained by adding dry amla also but Adding tea bags to chole while boiling has a complete chemistry behind this ...if you notice for faster cooking of chole I have added soda also which will tenderise chole but at the same time due to its alkaline nature will leave its bitter taste in chole as well, hence to neutralise the alkaline flavour some acid is required and tea leaves do the job very well. Hope I have made my point clear...
