• Ingredients: half-baked cheesecake
Cake foundation(please check past videos for recipe) 0:25,
Half-baked cheese mould, 20, 0:40,
Milk 50 grams, 0:54,
Butter 20 grams, 1:00,
Cream cheese 80 grams, 1:13,
Add the above ingredients one after another, heat it with small heat and blend it to be even.
Eggs 2(about 60 grams each), 1:38,
Low-protein flour 10 grams, 1:59,
Corn starch 5 grams, 2:03,
White granular sugar 25 grams, 2:17,
Cream of tartar 1 gram(or a few drops of white vinegar or lemon juice) 2:21,
Baking temperature(80-liter oven): here we need to bake it with water-bath method. Put a baking net on the baking tray and add water to fill half of the tray. Preheat the oven at 160 degrees for top heat and bottom heat. Keep it in lowest rack of oven and bake it for 30 mins. Then change the top heat to 180 degrees and the bottom heat stays the same. Bake it for another 8-10 mins to color the cakes. Then keep it in oven for 5 mins before take it out. The cakes would receive higher heat in a smaller oven, so we need to reduce the temperature by 5 degrees for every 10 liter reduction in oven capacity.

10g的面粉和5g的玉米淀粉是非常少的,加进去蛋黄糊特别特别的稀,我加了大概3倍的量黏稠度才对。不用分开进小模具,大的是一样好吃的😋,下面的蛋糕胚子我买了现成的,加上反而口感差很多😅
