I don't know if they could or couldn't infect Guardians, but with the Flood being Precursor in origin that might help them.

The guardians are pretty much walking corpses in of themselves, resurrected by the traveler's light via the ghosts. If the guardian dies but the ghost survives, who knows how that would play out. Likely would have no choice but to leave the awoken and human ones, exo's would probably have a chance to escape unless they were tortured and turned like Cortana was in-between Halo 2 and 3. If the ghost dies, it pretty much made the guardian mortal like how we saw with Cayde in the Forsaken DLC. One life left, no more resurrection... except from the horror that awaits them.

The knowledge that the Flood has of the universe and the ease in which they spread, combined with the Paracausal power of Guardians would make the Flood quite literally unstoppable. In Halo lore, if a Spartan were to be infected by the Flood, authorization is given to nuke the entire planet it’s on. If a Guardian were to be infected, I imagine you’d have to do something similar if not even more destructive.

If you think about it, the gravemind's plan for subjugation is similar to the Final Shape in some way. The Hive and Flood are opposite aspects of the Final Shape in a way. Sword logic - only the strong survive, therefore only the strongest should exist. The Flood's Logic - Everything is consumed to serve the Flood, therefore everything will become flood.

Even more so, The Witness and The Gravemind couldn’t be more anathema to each other… ⚪️The Flood are the leftovers of a Pre-Universe civilization that swore revenge against all life left in existence… ⚫️The Witness is a psychic conglomerate of what may be the first in-universe sentient civilization, who had EVERYTHING they could ask for delivered to them on a plater by their god, only to lash out when they were denied the one step said god could now allow… ⚪️The Flood’s end goal to overtake and devour EVERYTHING ALIVE across the universe, to make their suffering THE meaning of the universe, and The Gravemind does nothing to hide this dark truth… (I.E, The Flood are the greatest threat to everything IN The Universe, but the universe itself would ultimately exist the same as before) ⚫️Meanwhile The Witness seeks to simply _end_ existence as we know it, to “calcify it” into a perfected existence, free from chaos and suffering, md The Witness has taken great pains to keep it’s true endgame a secret from even it’s most devout followers (I.E, The Witness arguably has the better intentions for everything alive compared to the GM, but for those intentions to happen The Universe as we know it CANNOT survive in any conceivable form, assuming there would even be A universe left afterwards.)
