HALUSKI is comfort food for much of the world. There are several versions of this dish with minor variations in the ingredients. The dish I'm making is a Polish haluski. This dish contains pasta, cabbage, onions and sausage that all combine to create a hearty and satisfying meal. RECIPE BELOW ⬇️⬇️⬇️

⭐️ HALUSKI
I made 3 servings
1/2 chopped white cabbage - I think this could easily be doubled or tripled
1/2 chopped white onion
egg noodles - I used half bag
1/4 of kielbasa sausage - cut the kielbasa rounds in half to make them stretch further
Butter - Add desired amount of butter at the end.
If making with sausage, cook the sausage first and then cook the cabbage and onions in the grease from the sausage. Add salt and pepper. Meanwhile cook egg noodles in salted water until al dente. When finished combine in pan with the cabbage and onions and add in sausage.
Can substitute vegan sausage or make without sausage.
To make Slovakian haluski -Can substitute gnocchi for the egg noodles because they use a potato dough similar to spaetzle in their haluski.
Next time I will try this with more cabbage.

I like cabbage in mashed potatoes (Colcannon) and it makes a nice perogy filling.

oh that's a great idea for the pirogies. Not sure why I've been hesitant to try colcannon. It's basically similar to the bubble and squeak I made that I loved so much except without onions.

I grew up with this delicious dish. My mom’s was the best and I still can’t recreate it perfectly, but I love it! She was full blooded Czech.

@@ArdentMichelle-RECIPES I had to look up that version. Sounds tasty but perhaps more work and expensive due to the specific cheese. Tough goat cheese might work. I make dumplings for my sauerkraut and sausage, which I usually only make in the winter because it is such a comfort food.😋

Many of the recipes I saw did not include cheese, and even some Slovakian recipes called for egg noodles but I think most were potato dumplings 😂 So many version of haluski out there. Are your dumplings potato dumplings or just flour?

I cooked cabbage along with Kielbasa and the onions, garlic and peppers. Never have tried it with the egg noodles. But it’s delicious. I also use cabbage when making homemade soup.

there's a version of haluski that uses little potato dumplings too. I think anything with that sausage and cabbage with onions and garlic is going to be tasty. I do want to try more soups with cabbage. Thanks for the reminder.

Michelle great video! I’m German/Ukrainian/French Canadian and my Babba /Bubbi would make this for me 🤤 I have used pre shredded cabbage in a pinch but it practically dissolves in things because it’s sliced too thin. I’ve tried it before and have regretted it every time. I bought the ingredients for this today at Walmart !! not knowing you’d upload this video lol😂 When we add sausage to Haluski it’s name is Bigos.So tonight I’m making one Bigos and one Haluski :) ❤

This is a family favorite. I make it with kielbasie. When there's a great deal, I add crumbles of salt pork or bacon to servings.

I am Hungarian and we eat this sweet, and spicy with plack pepper and powdered sugar on top.(no meat)

My sister made this for me and my kids and they would call it aunt Marys polies and noodles. Its good with ham too. And the browner the better for the sausage❤

Here in the south, cabbage is the cheapest thing next to potatoes....I can't imagine living without either.

For a nice variation, try adding celery seed. Helps balance out the sweetness of the cabbage and onions, every without meat.

So glad you made this! When i make this i saute the cabbage slowly on medium heat for a long time. It sweetens the dish giving auch depth of flavor & color is brown. Eaten on egg noodles or mashed potatoes.

Greetings from Germany. I make this dish, or at least something similar, with potatoes instead of noodles and with smoked tofu instead of sausage. I season it with a 2 juniper berries, a pinch of carraway seeds and a bay leaf. You have to add them from the start because they release their flavour slowly

I've heard of people using potato dumplings also or subbing in gnocchi. Your recipe sounds like one I would like.

There’s a street taco recipe that’s shredded cabbage, cilantro, 85% lean ground beef, onion, a little bit of tomato, jalapeño cooked together to soften and meld I think you’d really like. I keep meaning to try it with TVP or crumbled tofu/faux beef bouillon/ olive oil to see if that maintains the richness without meat. I got it from a cookbook by Diana Kennedy but the online versions always have beans and things that the original didn’t call for so I’d just play with it. It’s about 4 cups cabbage to 1 lb meat to 1/2 cup cilantro and jalapeno/tomato/onion/garlic/salt pepper are all just small amounts to add flavor

For breakfast I had tacos with cabbage, potatoes, 1 egg and a few olives and tomatoes. It was outstanding 😋 but sounds kind of odd! 😂

We're having the same dish today but with a can of tomatoes with green chilis (cheaper brand of Rotel) instead of noodles. Some ideas to stretch cabbages, make cabbage rolls with the big leaves first. We had that last night and yes, the large leaves are a pain to get off whole but they'll patch ok. Work your way into the cabbage with dishes like the one featured. Depending on family size, maybe get a coleslaw out of the rest. Leftover slaw can be used in a homemade Asian wrap (just a homemade flour tortilla cooked in a wee bit of sesame oil) with other leftovers. Work through onions to stretch them, too, by keeping the outside rings for onion rings and using the middle for wedges or dicing.

My mom used to soften the outside leaves by submerging the cabbage in a pot of boiling water for a minute or two. It made the leaves more pliable. She also trimmed off much of the thich stem which helped in the rolling process. We also used the inner portion of the cabbage for Haluska or Cole slaw.

Czech person here - this is not halušky.(1) Halušky refers to the actual noodle/dumpling, not to a specific dish. So you can’t just use egg noodles - halušky is a specific type of noodle/dumpling more similar to gnocchi! It’s made from potatoes, eggs and semi-coarse wheat flour and is thick and round/oval in shape. (2) For cabbage halušky, we use fermented cabbage (sauerkraut), not fresh cabbage. We also use bacon, not sausage. All in all - you made a delicious looking egg noodles with cabbage. But it’s not halušky :) Maybe there’s a dish in Austria/Germany that looks like this, but halušky are Eastern European and are completely different.

That's interesting because this recipe for Haluski is widely circulated here in the U.S. and most frequently contains egg noodles. This has been published many places, including on the New York Times. cooking.nytimes.com/recipes/1023980-haluski-buttery-cabbage-and-noodles I've read about many variations of this dish between countries and that some contain potato dumplings which sounds like what you are talking about. I also read elsewhere that Polish varieties have egg noodles and Slovakian have dumplings. I appreciate you sharing your traditional version of this with us. Thank you. 😁

and thanks for sharing about the sauerkraut. I had not heard that. Now I am seeing tons of recipes for noodles and sauerkraut. 😂 I'm wondering how the fermented cabbage impacts the flavor of this dish. It seems like it would be a lovely balance to the richness of the dish.

@@ArdentMichelle-RECIPES I think the egg noodle version is a US interpretation of the dish, it’s even mentioned in the article you shared! It looks yummy, but traditionally it’s definitely made with the potato/egg dumplings, not with egg noodles. They don’t even sell egg noodles (except for angel hair noodles that we put in chicken soup) in most Czech/Slovak stores 😅 One version of the recipe also uses a special sheep cheese called Bryndza to put on top or even inside the dough. It’s the Slovak traditional version, and it’s truly amazing, though the cheese is very pungent! And for the sauerkraut, you definitely need to try that! As you said, thanks to the acidity it cuts through the richness, plus it adds more flavor and has a ton of nutritional benefits!

hi :) never seen this dish in austria. we cook "krautfleckerl" which is cabbage, onions, a little bit of sugar, all roasted till the cabbage is deep brown. salt, pepper. mixed up with thin, square eggnoodles, which are called "fleckerl". hope my weird english is understandable ;) but i am sure, this tastes also amazing. greetings from vienna

yes!!! Get the vegan sausage at Trader Joes. It doesn't have any fat in it, so you might need to add a little oil to give it some moisture, but it tastes great!

The problem is that this dish is not haluszki, but lazanki. Haluszki are flour and egg dumplings served with bryndza cheese and bacon cracklings.

I had read that some countries use egg noodles and some use the flour and egg dumplings.

I think, that Woiciech is from Poland. And I agree, this is not haluski, in Czechia and Slovakia and maybe in Poland, they are some kind of little dumplings with sauerkraut and bacon, or with brynza cheese with bacon. Hello from Czechia. @@ArdentMichelle-RECIPES
