Father and son duo, David and Jason, from Xi’an Famous Foods are in the MUNCHIES Test Kitchen making longevity noodles and concubine’s chicken. Their homemade (and super long!) longevity noodles are paired with a concubine’s chicken- a sweet, sour and slightly spicy dish named after a famous concubine from the Tang dynasty known for her hedonism (particularly when it came to food). Two really great guys. They donated $60k (one weeks revenue) to suicide prevention charities after Anthony Bourdain's death. Bourdain visited their first location when they were on the edge of bankruptcy and the television attention helped their business succeed.

Ok- I love this duo 🥰! So much good and interesting information, delicious dish, and great personalities 🤗. Besides the fact that the dad is also the king of drip, I love his silent proudness as his son presents and translates. So sweet.

The dad does look older for sure, but his skin is still very smooth, except for around the eyes. I bet this is because he's probably working really long hours everyday in the kitchen so doesn't get exposed to the sun very much and get sun damage.

Some call the chicken dish ‘big plate chicken’. I follow a uyghur KZbin channel Dolan Chick for making this noodle and chicken dish. She gives very detailed techniques how to pull the noodles.

This is a really interesting dish. Looks absolutely delicious. I've been wanting to get into cooking more asian-inspired dishes to provide something sharply different to the medieval european/british style cooking I usually like to do.

Nice! Those are some beautiful look at noodles! Also nice to bring focus on this region of China were so many people are suffering right now because of the oppressive government. I know they didn’t talk about it, because it’s a food video, but hopefully people will try to learn more.

Honest question, asked by someone who lived abroad and whose first language isn't English: how would you live in a country for decades and not learn the language? I know the Chinese community in the US used to be very insular, but it's been decades since Chinese food became a staple for westerners. I'm not attacking the guy, just really trying to understand how it's possible to not only live but have a successful business in a place where you can't communicate efficiently.

I think the older generations that came over to America tend to socialize and feel comfortable only among people similar to themselves. I think his son (and his other children?) does all of the interfacing with the non-Chinese customers and clients anyway. But we don't know if the father doesn't speak or understand English though. Maybe he's just not comfortable speaking English in front of a camera.

In a different video, the son said they moved to the US when he was 8, so "decades" might be a stretch. It's probably just barely two decades based on how old the son looks. The son is the one who manages the business side, the father is the master chef, and for that he doesn't need English. But as another person commented, he probably does know English, but may not feel comfortable speaking it in front of the camera.
