Let us know in the comments below if you enjoyed taking this "side-track" and going on a land tour with us and some direct descendants of the first chocolate masters. Outside of sailing we love sustainable organic farming practices such as this. We also love visiting places where people are trying to be as self-sufficient as possible. There is so much to see in Belize!

Hi Stew and Zaya! Two things especially stood out in this wonderful video. The first is that once again you demonstrated how gifted you are in sharing the world with others, and in the process, educating. I learned things about chocolate that I never before knew-including the cacao content in different chocolate products, and that chocolate making is an art and science whose origin is much longer ago than I imagined. I love it all the more that it originated in Latin America as opposed to some Hershey or Nestle factory. ;-) Another thing that I'm especially enjoying is watching Leo take in all of the new experiences that you are offering him every day. New vistas, new tastes (I think he's going to be a lifelong chocolate lover) and new people and dialects. I think you were spot on in the video some time back when you described your and Zaya's judgement that he would get a far greater education with you on the boat, in your travels, than in a conventional setting. I'm hard pressed to think of a better environment for a young child to thrive. I don't have any kids but I have close friends who are also devoted parents. I'm aware of the fact that children's brains develop astonishingly fast during their first three years of life, and that constant stimulation and new experiences are key to their successful development. Life with you guys, on the boat, and in all of the new places, is like 100% cacao chocolate for his neurons! I loved watching in an earlier video when you put the three different kinds of fruit in front of him, identifying each, and asking him to choose what he would like. The last time you showed was pretty amazing, as he was clearly assessing and pondering the choices. Magnificent stuff. When he smacked his lips after Zaya gave him that sample of chocolate, I couldn't help but grin. God love him! In the meantime, I'll be shopping around for some cacao... :-)

The lunch, all of it, looked tasty. I'm an American expat living in MX. The chocolate chicken can be turned into chicken mole, with some tweaking. Chicken mole is common in southern MX.

I'm learning that the YT algo kind of expects you to serve up videos that your existing subscribers signed up for... which doesnt encourage you to break out of your genre. Im pretty sure our followers have a healthy interest in where our food comes from and natural history etc so we will persevere! Cheers

An addendum to my previous post. No two moles are the same. It's a dish that varies by the cook. Chilies, sweet and hot, indigenous to MX is the clue. I even add a little vanilla and cinnamon to mine. Cumin also
