I just tried this and its the best tiramisu ever, i just recommend reducing the amount of sugar from 1 cup to about 3/4 cup.

For all the people that doesn't like to eat the raw eggs!⬇️ After adding sugar(120g) to the (5) eggs yolks and mixing it, then cook them on the steam for an additional 15 to 20 minutes, and then when it cools down, add the mascarpone cheese and mix again! And then mix sweet cream(250ml) with one tablespoon of vanilla extract! And then mix all of that together!😉🙂🙂 Btw best tiramisu ever trust me!😄😄

Made this for a friend’s Xmas gathering last weekend, with slight tweaks: 1. Reduced the sugar content in half (used brown sugar); 2. Used coffee liqueur instead of rum. It was a hit - my friends loved it! I enjoyed making it too because it was easy to make, yet light, airy and fluffy.

Next time try "cooking" the mixture of eggs and sugar on simmering water bath for 5 minutes while stirring the whole time. This way they are safer and the texture is much better

Hi, can I ask you a question because you said the texture is better? I also make a sabayon first. I refrigerate it and then mix with mascarpone. Yet as soon as I mix the mascarpone in, the mixture deflates and becomes runny. Do you know why?

Almost perfect - you should do eggyolks and sugar over double boiler to stabilize the eggs. The egg whites can be cooked using a Sirup. But recipe is good

🛑PSA!!! 🛑 Most eggs are not pasteurized in egg form. Make sure you find pasteurized eggs before making the recipe or you can pasteurize eggs at home as well. If you use unpasteurized eggs you may be opening yourself and whoever you share this with to salmonella poisoning which can be deadly to some people.

Personally, I don't soak cookies in coffee for more than a second or two because they can become too soggy. The moisture in the dessert does its work overnight, the time it is supposed to sit in the refrigerator. I also use specialty espresso coffee. made on an espresso machine... and to finish I use little sugar, it makes it less cloying.

To make your tiramisu 100% Safe you will have used pasteurized eggs. This is commonly used in Tiramisu recipes that don't use heavy cream (aka the OG tiramisu recipe)

you can cook the egg and sugar in bain-maire. put the bowl over the steam of boiling water and stir there like 4-5 mins. this way egg is no longer raw and it doesnt lost any taste
