Yes Sir buddy mighty fine looking dinner right there. I picked up a bronco about 6 months ago and out of the 8 grills I have it’s probably my favorite one. Very very efficient smoker.

My only question about this type of drum smoker is about the heat gradient. Doesn't the bottom of the slab get a lot hotter than the top from being that close to the coals? it seems like it would cook a lot faster.

You think it would, but the meat cooks the proper way. The bottom of the meat does not get burned if you're cooking low and slow. I've had meat about half an inch to an inch away from the coals and nothing happened.

@@MoesBlackGoldBBQ honestly all I have done are pork butts. I tried the ribs one time and I want to do more hanging from the hook. I haven’t tried whole chickens yet. The bronco is so cool because you can do so much with it. Thanks to some of your videos you inspired me to cook more on it. Keep up the great grilling and smoking man!

The bronco is my favorite for cooking ribs and chicken! I ended up ordering another 7 hooks because I like to double up on my chicken halves. I can cook 4 whole chickens in one go 😉

I have big smoker with the pipe also having racks. I prefer my bronco. It has never failed me. Even one first place fajitas using it. Other people there had fancy big smokers, but my bronco pulled through

Question, smoking the meat this way, does it cook faster? What would you say from your observations are the pros and cons of smoking this way? I still want to try it because it looks like a hootenanny of time.

Your meat will cook faster. When you don't use the heat diffuser plate, your meat will take in all the heat. Ribs will hang a few inches away from the charcoal, but they won't burn at the end. Some people will cut their ribs in half, so they are not so close to the charcoal basket, but I don't do that. Only con I can think of is your meat may tear from the hooks and fall into the charcoal basket. Pros: Your meat is closer to the heat source. You can hang a good amount of food. Your meat will evenly cook because heat rises up and hits your meat from the bottom to the sides and the top of your meat. If you are fearful that your meat will break off from the hook, you can always daisy chain your meat.

I do not flip or move the ribs around. Being close to the heat won't affect the meat. The meat won't burn at the end or be overcooked.

Hey Moe, good to see the Bronco back in action. I've kind of neglected mine lately. Been cooking on my PK or one of my Webers mostly. Haven't tried a hanging cook on my Bronco yet. Need to do that. Those ribs and chicken you just did look great. My wife don't like spare ribs. The little cartilage pieces creep her out when she bites into one so I usually do baby backs for her. But she's out of town this week so I think I'll head to the grocery store tomorrow and get a full rack of spares and cook them up for me. That will be a good hanging test for my Bronco. Wish me luck Brother. Thanks for the video. I can relate to the sweating. I've experienced the 100 degree plus Texas heat before on several motorcycle trips a few years back. Oh, it's 75 with a light breeze here in central Alabama today. I have to enjoy it while I can. It won't last much longer. Later

It feels good to post a video. Felt like I needed a break from KZbin, but I'm hoping to upload more. I enjoy baby backs, but spares just taste better to me and you get more meat on the spares. Utilize the Bronco on hanging meats. You're gonna love it. Let me know how hanging your ribs go. It's like for the past months the temp has been in the low to mid 80's, but that's changing as Temps will be to the high 90's to 100's. I'd take that 75 right now lol.

Yeah, I'm looking forward to a hanging rib cook. Gonna try to do it sometime this week. Don't know when. Guess it'll depend on how long it takes to find a good rack at the grocery stores. Good ribs are not easy to find around here at times. I'll let you know how the cook goes. If they're half as good as yours looked they'll be killer. Thanks for inspiring me to try it. Your ribs will turn out great. The thing is what matters is how you enjoy your ribs. All I do is give viewers an idea of how to BBQ. At the end of the day, it's your BBQ and enjoy it how you like it. That's what I go by.

I can't make up my mind to buy either the Oklahoma long horn smoker or a smoke barrel. What do you prefer and why?

I have the Oklahoma Joe's Highland, which is the smaller version of the Long Horn. I love that smoker. If you want to cook with fire, then buy the Long Horn. But if you want to grill, smoke, and hang your meats, then buy the Bronco. I will say that with my Highland Smoker, it was not perfect out of the box. It took some time and small mods to figure out how to run the Highland Smoker. But with the Bronco, once you put it together, it is ready to go. Once you figure out how to adjust for the temps you want and which brand charcoal or lump works best for your Bronco, then you have it all figured out. The Bronco is a set it and forget. I can use B&B briquets and get more than 20 plus hours of cooking time with one full basket. I still use my Highland smoker, and I love it, but I get more enjoyment out of using my Bronco. So for me, it would be the Bronco.

Miriam Sicilia it seems like you're getting it down already. Trust me, once you figure it out with the Bronco, it will dial it in every time for you. I will tell you, when hanging your ribs or brisket, it's okay if the end of your meats is like 2"-3" away from the charcoal. The ends won't burn. I've had a lot of people comment about being worried about burning their ribs, so they cut them in half and hang them that way. I have never burned any food I have hung.

I've never experienced any burning. From using the bottom cooking grate to hanging food. I've had food that was hanging about 1 to 2 inches away from the charcoal and food was never burned.

I thought you were suppose to let the charcoal burn through before you start cooking? Am I missing something. I'm new to this, so any tips will help.

For low and slow the charcoal will burn slowly through your entire cook. This is called the minion method. You have small portion of your charcoal lit and have your smoker run at Temps from 225-250 will allow the charcoal in the basket to slowing burn, allowing more cooking time. If you're going to grill then all charcoal will be ash white.

Thank you for subbing. It's a easy drum smoker to use. Once you figure out how it works, it's a breeze. You can hang meat, smoke meat, and also grill on it by bringing the charcoal basket up to cooking grate level. It can do it all.
