Hi you can safely store the leftover glaze in an airtight container( cover glaze with cling wrap, ensuring the cling wrap is touching the surface of the glaze to avoid skin to form) or zip lock bags & refrigerate.When ready to use again reheat the mirror glaze to 94°F (34°C), which you can either do over the stove or in the microwave. Since mirror glaze does not conduct heat well, you must break up the gel chunks as much as possible and keep it stirring in motion.Use a blender to process the glaze until smooth.

Hi thanks for watching Wait until the glaze completely stops dripping. To remove any glaze hanging down off the side of the cake, run a knife across the dangling glaze so that it sticks to the knife and gently twirl the knife to remove. Carefully pick up the cake up by using both palms Or 2 spatulas reaching under the cake. Place the cake on a serving plate. Hope it helps 😊

Hi ofcourse you can make without cream cheese. Make custard with egg yolks sugar vanilla bean and milk and mix with whipped cream add white chocolate if you like it 1 egg yolk 20g sugar 1/2 cup (120ml ) milk Vanilla bean Would be enough for this recipe Boil milk with vanilla beans, Mix egg yolk with sugar pour hot milk over egg yolk keep mixing and cook until it thickens

Anisha Lokegaonkar thanks for watching my video and I am so glad that you liked it. Either glaze was too hot before pouring or cake was not cold enough. The temperature of glaze is soo important it should not be too hot or too cold. Cool it down to 35c or 95f. I suggest using a candy thermometer for glaze recipe and freeze your cake before pouring the glaze. Also make sure the glaze is not too thin add a little more gelatine ( not too much )it will stabilize it.

Hi Unfortunately you can not fix it because to get rid of the lumps you would have to heat the mousse and that would destroy the texture. You might have to do it again. To avoid lumps dissolve the gelatin in cold water and let it bloom properly, then microwave for few seconds then add 2-3 tablespoons of the mousse, stir and then carefully add the gelatin to the rest of the ingredients while whisiking continuously.

Khalida Shafira it’s probably Silikomarts mold, an Italian brand. You can find it online. Otherwise just look for silicone cake mold and you should find molds alike 😊
