自分の事を話す時は me time なのはわかったけど例えば彼の（彼女）一人時間について話す時はやはり him time （her time）になるのだろうか? もしこの考え方があっているとしたら彼は he, his, him の変化があるからわかるけど彼女は she, her, herと変化するから今回の my time の彼女版について考えると彼女の一人時間について話すのかどうかがわかりにくいな。

「my」を使いながら「me time」のようなニュアンスを出す方法を思いついた。「time of my own」だ。【例】When I have time of my own, I like to read, take care of my flowers, and sit in the sun. 【Collings の me-time の定義】 the time a person has to himself or herself, in which to do something for his or her own enjoyment 【Oxford Languages の me time の定義】 time spent relaxing on one's own as opposed to working or doing things for others, seen as an opportunity to reduce stress or restore energy.

一般的には、his me-time や her me-timeのように表現します。me timeは「一人の時間」なので二人以上の場合は、How do you guys like to spend time together?のように表した方が自然だと思います。

"Me time"自体をひと括りの名詞として扱う印象があるので、your "Me time"で合ってると思います。あまり会話で聞くことはないですがインターネットのArticleなどでは見かけます😉
