can confirm that this works really well. it's very easy as the only way you can mess it up is by letting it run out of water and burning on the bottom, but even then it turn out pretty good

I am in Dubai, and pork is available and would love to use pork, but our pork is expensive and old, as local culture limits the source of fresh pork. Can you recommend or tried with Lamb or beef alternative? And yes again in the middle east we dont have access to free wood so easily, for obvious reasons and we use the LPG, which is way way cheaper.

Before you diss gas too much :) I have found this a great recipe that adapts well to locked down sydney apartment living where the gas stove is my only option. Will compare it to the fire version in due course. Also worth mentioning that a 2kg boneless pork shoulder makes a sh*t ton of pulled pork but it does freeze really well. And can be a good idea to reduce the excess cooking liquid (by half) which makes an awesome gravy for the mandatory cast iron corn bread accompaniment.
