If you leave the main stem, it will promote bolting and seed. If you remove the main stem above a shoot growth, it will promote new growth.

I believe you are supposed to leave the main stem to continue to grow and pick the smaller "branches" towards the base of the stem. At least this is what my local greenhouse told me. I haven't tried it yet, but I hope it works!

I have the same question...it seems like such a butcher job simply to cut from the base. Also, my wife's birthday is May 28th...the day you uploaded. Haha.

+Michael Lamb Well, in practice I found that cutting at the base did not produce regeneration.
