I've made fig leaf ice cream and it was a big hit with everyone who tried it, even those who don't like ice cream to begin with! Also have made syrup, and used the leaves as wraps or simply placed in a bed on a baking sheet with meat / fish on top and it does add a great flavor and smells incredible while baking. I toast the leaves before using in things like ice cream and other infusions and I think that increases the coconut sugar-like flavor while reducing some of the grassy flavors.

What a awesome fig background. I've been using fig leaf for 2 years now. As a 1 cup coffee drinker I'll take the dried product and put it on top of the coffee grinds. This of course gives me a fig flavored coffee.

I agree. I dry some of my fig leaves in the oven at very low temp (don't own a dehydrator) until they dry and crispy. Then crumble it and use the dried fig leaf by itself or mixed with mint tea to make a nice refreshing tea.

Ross, you bring up wonderful childhood memories. We would cut the tree and collect the white sap. We were pretending to make rubber, as if in a far away land. To a 7 year old boy, that fig tree was a jungle.

I love fig leaf tea. I have four varieties of fig trees and about 9 trees. 7 are in pots and two in- ground. I harvest just as you mentioned. Figs are spent on the tree. They were yummy. Now I pick healthy looking leaves. I pick a few leaves off each branch. I double wash them in water. I dry them on a cotton table cloth and then dry them in a 180 degree oven for 40 minutes. A touch of honey in the hot tea and bam!

Hi, I make stuffed fig leaves the same way as making stuffed grape leaves . You have to boil them in water for 30-45 min. and discard the water. I also make stuffed butternut blossom.

I used to make quite a bit of goat cheese that I wrapped in blanched grape or mulberry leaves. There is a buffalo and cow’s milk cheese called Ficaccio made in Campania, Italy that is wrapped in fig leaves. The fresh cheese is wrapped with fig leaves and aged in a cave for 30-40 days. I haven’t tried it but it sounds wonderful!

P s You could take yogurt, add a little salt, put it in cheese cloth and suspend it over a pan overnight. You will have a nice, fresh cheese that you can wrap in blanched fig leaves. Put it in a ziplock bag in the fridge. Check it every few days in case it molds but the cheese should be ready to eat in a month.

I've been making tea for years from Fig leaves and stems(both fresh and dry). I use them for cooking as well instead of bay leaves. There are people that drink the sap as well, but some folks are allergic to it. Need to try your recipes too. Try drying the stem and throwing them in a pot of rice while it's boiling. I boil fig leaves for tea. Even after I've boiled them, they're very tough. I don't know if I could eat them. I would like to see your recipes for eating them. They make a great tea. They act like a diuretic. I have actually lost a few pounds drinking it every day.

Well Ross, I am immune to fig sap as well as immune to poison oak and poison ivy. Maybe there's something comparable there.... Thanks for the info. Got any fig ice cream receipes? It's mid October and I think I picked my last few figs today. My mom pickles figs and freezes figs and over the winter, makes steamed puddings using figs. Wonderfully delicious!

I make the tea. There are cookie and cake recipes that use fig leaves because they have that coconut/vanilla flavor. Did you know that the tea is better for blood pressure? My trees have rust on the leaves. I don't know who to call. I've been told that they need to be sprayed with copper sulfate solution. Do you know anything about it? Thanks for the video

I maintain a ceiling-height Euphorbia houseplant loaded with similar latex sap and even wear safety glasses when pruning. The tiniest speck of latex sap in your eye is unbelievably painful.

Funny you should mention immunity. I have gotten the sap on my hands, and had zero discomfort. It might be because my hands are very calloused. I never got the sap elsewhere though.

Yes. When the leaves fell off in late October or November, keep the tree in a garage. Give it a drink maybe 2 times each winter month. Bring it outside after temps are 50 degrees and leaves will start to sprout again in spring.

There is no reason to waste potentially edible things. Fig leaves also are pretty tough, so there are better things for the compost pile.
