I found a wonderful recipe for horseradish that you can hot water bath can. It is called: Beet Relish with Horseradish on page 161 in the Ball Book of Canning and Preserving. There is also one video here on KZbin showing a gal making it. We have made it twice now and absolutely LOVE IT! If you like horseradish and Beets, You will love it too. Thanks for your videos. I would think that it would be similar to canning carrots, only the prepared horseradish should be safer because of the addition of the vinegar. Of course, the vinegar is a small amount, so it would likely be necessary to pressure can it. Prepared horseradish can be purchased "canned" in the condiment isle in the grocery store, so there is a safe way to can it.

Fantastic video!!! Thank you so very much! I recently found out I had horseradish on my acreage. Funny story.. for the first four or five years of living at my current acreage there was this one weed in my garden that I just could not get rid of. The plant would sprout in spring, about an inch to 2 inches out of the soil and I would promptly dig up as much of the plant root as possible to discard. Even at such an early stage of growth this weed had one heck of a root system! I could not get rid of it, it took me about 5-6 years to finally get it out of my garden. It had spread to another area of the acreage and I had even tried Roundup at one point. It did not work! This weed was by far, the most hardy & annoying weed I have ever come across!! Then last fall I was at a greenhouse, they had an end of season sale on. As I was exiting, they had one loan plant on a stand up by the checkout, it had a reduced sticker on it. OMG!! This plant looked exactly like the weed I have been battling to get rid of for 5 long years! So I asked the clerk what it was. She responded with "horseradish".😳😳 I was like are you freaking kidding me!!!??? Horseradish?? Unbelievable! The clerk proceeded to tell me that if I purchase it to be aware that it is extremely hardy and can be somewhat invasive. I was like yeah no kidding! I couldn't kill the thing for 5 bloody years, it kept sprouting up all over my garden! I couldn't believe it. Lol Anyway, I gave up on trying to kill it in the horse pasture a couple years ago. Now I know it's edible I am going to try & harvest some. I wonder how good it will taste after not being harvested for about 10 years & it growing in what is likely to be clay? I won't be able to dig it up on my own because the ground is so hard. I live in the Edmonton Alberta area and the nights are starting to get pretty cold so it sounds like it's a good time to try & harvest some. The good part is knowing that no matter what I do to the plant or how much I decide to harvest, I won't kill it!🤣 My favorite thing to make with horseradish is my Mom's dill dip. I can't give you the exact recipe as it's always been done to taste, but in general, take a good couple of heaping spoon fulls of miracle whip and put it in a bowl. Add a good amount of chopped fresh (frozen or dried works too) dill and start with about 1 tbsp of horseradish & stir. I keep adding dill & horseradish until desired taste is reached. It should have a nice tang to the dip, but not overpower it. This dip is great with raw veggies and is awesome with various cooked meats as well. My neighbor also told me that if you add a horseradish leaf to your pickling cucumbers, it helps to keep the cucumbers crisp. I wish I knew that about 1 month ago, but will try it next year! Thanks again for such an informative video. I can't wait to go harvest!

Thanks so much for sharing your story, it gave me a good giggle! The dip recipe sounds awesome too. Yes, horseradish is hard to kill. I find I spend time at the beginning and end of each season removing little plants that pop up. I’m sure grateful to have such a nice patch now that beet and beef roast season is upon us!

@@frankie-lounelligan7050 I am glad I could give you a giggle! I did not find it funny at the time, but can laugh about it now. Have you heard about adding a horseradish leaf to a jar of pickling cucumbers, I wonder if it works

It really grows all over, I even see it on the sides of highways around Calgary! I do like to grow it myself though so I don’t have to worry about what it’s been exposed to and absorbed. I like your idea with the bucket. I really don’t need to grow any more myself but maybe I will experiment with that for next year.
