Harvesting Murasaki sweet potatoes

Nice harvest, Tom! I heard it’s best not to wash them and to let them cure in a shaded, dry place for a few days to store best.

That’s right. When you first dig them, the potatoes’ skins are very thin and delicate. Don’t even rub off the dirt. Just let them cure for about two weeks, then wash and store. I dug them today because we will have a week or so coming up with 90s/70s, perfect for curing.
