Just caramelise the onions by use of there own sugars. then use a more sour cherry and heat that as well. it could actually work with wild meat like deer or boar. it would be not that much different from using red berries

I was totally thinking a similar thing. Grill some vidalias on like a kebab, then add in some (made separately) thick-ish cherry sauce made from a puree. I actually love sweet and savoury flavour combinations. Pork and maple, spicy peanut bake, General Tso's on a number of things. The list goes on.
