The first one is pickled garlic in vinegar. 2nd is chilli oil and last is Northern chilli sauce. People usually dip the fried “bread” thingy for longer

By the way, when you are unsure about a food item or unfamiliar with how to pair your food, definitely ask the server because they will explain what it is and how to eat it. The fried doughnut is not chicharon, but at least you knew to dunk it in the broth until softened. Good job, Tolu!

I'm very impressed at how well Tolu can use chopsticks. For newbies of chopsticks who want to learn, just watch her hand and how she manipulates the chopsticks. That's perfect technique.

"my timing is so off with these restaurants" That's just how afternoons are - naptime is a huge thing in Vietnam which as a foreigner kinda cuts two ways: it's a nice time to walk around because there's significantly less traffic but it also means that some places are closed. Or they're "open" but you go in and can't find anyone haha. These little shops are usually family run and might be open all day (staying open really late by Western standards) so that afternoon lull is kinda their only break. Also, you're in the north so you gotta get yourself some bún chả.

Hi Tolu, I am a new fan of your channel and you as a person and your faith in God. You possess the highest quality and elegance as an individual. You are not afraid of taking chances and risks and I love your bravery. You are right, you are granted this one life to live and why not explore the world? My husband and I are 53 with one child who graduated from college but still has one more embarking on college this year so we need to seize all our extensive travel plans for the next 4 years until she's done then we can begin our journey. We just hope it's not too late due to age and ailments. Wishing you a safe journey in Vietnam (my beloved country) and and many more to come! Yeah, finding food off hours can be difficult unless in a bigger city. By 830 all the noodles can be gone...it's sad.The Vietnamese really do keep schedules. From a young age they get up super early for school/ classes. Businesses keep the same operating hours. At least there is consistency...gotta get used to not getting anything done during the midday. In America we would go to run errands at lunch, well, that's nap time in Vietnam.

Hi i really like your content, how are you during these lunar new year eve in Vietnam ? would be hard to find a shop-eating during this time since everybody closed, you need someone as a guide or friend here to help you with that. Soon you come to Hà Nội next i recommend a few dish that you must try here : Bún chả (rice noodle with grill pork dip in fish sauce) Bánh mì pate , phở (yes because phở broth can be different in everyshop/ city), Bánh cuốn (steam rice flour pancake) although all the dish i say is breakfast but you can find them everywhere during the day! enjoy your stay in Việt Nam!
