Sailing certainly has its charms and challenges, but an MV like yours and what you're doing totally "STOKES"me out! After saying that, I realized I hadn't used that old surfer word in years! Figure costs to repair/maintain/overhaul as desired or required. Divide costs by hrs of operation = costs per hour. Establish an account and periodically pay up! 2. Figure all other costs per hour, add to a different account account. 3, funds in accounts become active in highly conservative investments. This way, you 'll have funds when needed. Arŕrrr, Matie, avast and be off wit ye! Thy engine room be worse than a pig's nest, a sty! Ship shape and Bristol fashion ye about it! Now wit ye, and not be ye awasting about it!!! Arrrrr

For the steaks Gus... Get a roasting pan with a rack. Dry the steaks with paper towels. Put a generous amount of course sea salt on one side of the steak and rub it in. Flip the steaks and do the same on the other side. Put the steaks on the rack in the pan and leave them in the fridge for 4-6 hours, uncovered (the air needs to circulate around the whole steak). Remove from fridge and wipe off all the remaining sea salt off with paper towels. At this point they're ready to cook, but can also just be wrapped and put back in the fridge for later. You can pan fry, broil, bake, grill or my personal indoor favorite, air fry in an air fryer. For the air fryer, preheat to 450 degrees with the rack in. Add the steaks and cook for 6 minutes on each side (More or less time, to your liking). Remove and just add some freshly ground white peppercorns from a pepper mill (this step is critical). That's it. Enjoy!! You only need those three ingredients: Beef, Salt, White Pepper. Can't be beat! :) PS - The sea salt does several things. It tenderizes the meat and draws out the surface moisture, so the outside sears quickly and the steaks retain their juices. It also adds just the right amount of that salty/umami flavor. Don't leave them on the rack with the salt on for more than six hours though, or they'll just taste like salt :) Cheers, Sev

Guss I love your videos and I am 17 years old and have grown up working on my grandpa's 1976 42ft gibson houseboat. We keep it at a marina on pool 26 of the Mississippi River. You should take a trip up the Mississippi.

Start the steak in a hot pan. Sear each side, then put it in the oven. The sear will seal in the juice and flavor!!! Let it rest 5-10 minutes, slice and enjoy!!! Great series! We should all be so hard working and fortunate!

Gus, you need to install “red light” illumination on the bridge. Switching the white light on and off will temporarily blind you at night. Go with all red illumination on the bridge Gus. It will make running the bridge much more comfortable and safe.

Don't leave the helm without a watch person. I almost had a major collision because I didn't insist my wife watch the helm. She did and it saved us from a collision with a shrimp boat.

On the steak cook, try 5 mins for each side in a pan, then toss in the oven with some butter for 15-20 mins depending on the oven and how you like your steak.

I have been waiting for this video. I truly enjoy the trip down the East River. I was born and raised in NY city decades ago. I used to have an 18’ SeaRay that I used to cruise around Manhattan island with. Got a little choppy and stuffed the bow a couple of times. I think I’m speaking for many viewers when I say that I wish I could have done what you’re doing.

I've always enjoyed watching your adventures from the trawler to the Broward. I grew up on the Chesapeake, 2 blocks West of the Chesapeake Bay Bridge-Tunnel's Southern landfall. When I was in Sea Explorers we rowed from what is now Town Point in Norfolk to Elizabeth City every Spring...I made the trip 3 times - best speed was 13 hours and 16 minutes. First on the left entering the Elizabeth River are the Forrestal Piers, then the Destroyer/Submarine piers, then the cranes at Norfolk International Terminals, then the city of Norfolk proper.

Been a subscriber from the beginning. I'm amazed by your mechanical skill and your ability to focus and keep on task during your trip preparation. The Broward 70 is an absolutely beautiful boat. The lines are so sleek for a boat her size, and she looks a lot newer than she is. I live on the CT Shore and keep my 350 Mainship in Groton CT. I would say that I would have been glad to meet you underway, but I remember that storm you came through and there was no way I'd take my 39ft Mainship out in that! I've transited the sound from Oyster Bay NY to Niantic CT in 40 MPH winds and 8-10 ft seas in a 24 ft Novi, so I can relate! Fair winds and calm seas, I'll be watching.

Many years ago I bought a Rinker V190 cuddy cabin with plans to grow from there. Instead, my growth was from a tent to a 30 foot 5th wheel for camping. Can't do everything!
