This delicious banana bread is perfect for breakfast, snack, or dessert! It's made with gluten-free flour, so it's also a great option for people with dietary restrictions. The peanut butter and dark chocolate add a rich and decadent flavor that everyone will love.
This recipe is quick and easy to make, and it's sure to become a new favorite!❤
Ingredients:
2 medium ripe bananas
2 medium eggs/ or vegan substitute
1 teaspoon vanilla extract
1/4 cup(60 ml) milk/ plant milk
3 tablespoons peanut butter(natural)
~ 1/2 cup(60 g) oat flour
~ 1/2 cup(55 g) rice flour
1 teaspoon baking powder
1/4 teaspoon baking soda
a pinch of salt
1 tablespoon lemon juice
50 g(1.76 oz) dark chocolate(use chocolate without added sugar if you can)
chopped nuts for decoration
bake 35-40 minutes at 180°C /360°F

Hola! Use 1:1 ratio of almond flour to rice flour. However, it is important to note that almond flour is a denser flour than rice flour, so your banana bread may be slightly denser if you use almond flour. You may also need to add more liquid to the batter to compensate for the extra absorbency of the almond flour

This looks amazing..I have everything in my pantry except the rice flour..can I sub tapioca flour maybe? Any ideas?!

Glad you like it! You can substitute tapioca flour for rice flour in this recipe. It has a similar consistency to rice flour and can be used in a 1:1 substitution. Here are some things to keep in mind when substituting tapioca flour for rice flour: Tapioca flour is a bit more absorbent than rice flour, so you may need to add a little bit more liquid to the batter. Tapioca flour does not have as much flavor as rice flour, so you may want to add a bit more vanilla extract or other flavorings to the batter. Tapioca flour can make the banana bread a bit chewier than if you used rice flour. Overall, substituting tapioca flour for rice flour in the banana bread recipe is a good option
