I happened across this video this morning. When you taped this, you had no idea what would be happening in March 2020. At nearly 70 years of age, I live alone and I’m practicing social distancing like much of the world. I love sweets, but I really don’t want this isolation to become a very unhealthy time for me. I’m excited to try these breakfast cookies. I have everything needed, so I’m about to head for the kitchen. And since they can be frozen, I’ll keep a few in the refrigerator, but I’ll freeze some from each recipe, so I have some for a few weeks. Thank you.

Made the chocolate and peanut butter cookies. Added six chopped dates instead of stevia to sweeten and some almonds and raisins. These are the best cookies I have ever made that are totally dairy, egg and gluten free.Amazing. Thank you so much. Perfect recipe. I just spooned dollops of the mixture and made at least 15 cookies. I shaped them a little with the edge of the spoon but they all looked great. SO DELICIOUS

I do not care for pumpkin, so I did not even attempt making those ones; however, after trying the other 2 (carrot cake and chocolate peanut butter,) I might have to try making the pumpkin ones. I cannot believe how amazing they turned out...... They are sooooooooo delicious, moist, and somewhat healthy. Thank you so much for sharing this recipe.

I’ve been making the chocolate peanut butter ones a lot - but with sunflower butter in place of peanut butter since I’m allergic to peanuts. They always come out great. Also just started adding dark chocolate chips which adds a whole new dimension to these. If I’m out of honey I just use about a TBSP of sugar. Love this recipe.

Just tried making the Carrot Cake Cookies, and they were phenomenal. Just like a carrot cake, but in a cookie. I added some ginger as well, and white chocolate chips. But oh they were delicious. Thank you for this recipe

If you swap out the honey for date paste as your sweetener, you would have fully nutritious cookies.

@@charkitte using date paste would be important to me because my kids are vegan and don't eat honey. The problem is I don't know how much of it to use to replace that 1/4th cup of honey. I hope I'm able to find date paste locally.

Made the carrot cookies right after watching. I substituted almond butter and pecans and they are so good. I love that your recipes are typically made with ingredients already found around the house. You are one of very few people whose videos I watch and then make actually make the recipes.

Just to spruce up certain cookies you can add Cream of Coconut (like Goya's canned). I just made these with banana-choc.chips-coconut flakes, and happened to have cream of coconut handy....nice addition for moistness.

I am in the process of making the chocolate cookie one, I substituted the peanut butter with PB2 for a lighter cookie but still had the flavor. WOW oh so good!!! Thank you and I am super stoked that I ran into your post.

Tried the recipes. They work well. Makes a flavorful, but not sweet cookie. For breakfast I would say these are perfect. If you want to make them more for "dessert" add just a little more sweetener. Lovely. Thank you.

Your written recipe says "baking soda" but in your video you say "baking powder" can you clarify which one it is? Thx looking forward to these

It might be baking powder. Baking soda, in the absence of acid, cannot make things puff up and leaves a bitter aftertaste.

i can sometimes get brown bananas discounted at the green grocer or if you cant find any roast the banana in the oven until the skin turns brown and it will bring out the flavour and soften it so its sweeter and dont have to mash it

stab a banana with a fork a couple of times and then put in microwave- about 1 min at a time depending on the size. It brings out the sugar in the banana.

I made the chocolate peanut butter ones, with extra honey (i didn't have liquid stevia) and smooth peanut butter. My ice cream scooper must be a little bigger, because it came out to 12 cookies, but it was 12 even, no scrapes left. Delicious, my girls will love them for breakfast. Be warned, let them cool completely before putting them in a sealed container. I didn't and they got a little soggy. I'm hoping transferring them now to another container will help fix this in the next six hours (yes I'm still awake with less than six hours of sleep ahead of me, but thats mom life!)

Do you use the bananas to bind everything or for sweetener? I don't like everything to taste like banana (especially since I don't really like them) so I substitute bananas with pureed carrot or sweet potato.

We just made pumpkin waffles for dinner yesterday! I look forward to making pumpkin breakfast cookies! We currently have about 75 pounds of rolled oats in our house waiting to be eaten! When we have extra canned pumpkin, we freeze it in 1/2 cup proportions in a muffin tin and then throw it into a freezer bag!

Want to let you know I have made the carrot cake cookies about 6 times....everyone loves them. BUT I get about 36 cookies , just perfect for a quick snack for me with a cup of coffee or tea. I use a 1 tbps scoop.

Interesting recipes and I like that you have them listed in the description box! I find it much easier to just take a picture of this and send it to myself and then share this to my Pinterest account so that I can refer to the recipe when I need it if I forget where it is! I do wonder why all of the recipes I find on KZbin are supposed to be healthy but include a lot of sweeteners that are high on the glycemic index like honey etc. For example I would use organic date syrup or pineapple or another natural fruit juice rather than honey in most recipes; and I would sub in avocado for butter (in most recipes) when I am baking but everyone seems to be using honey or stevia or coconut sugar and I am not sure why since clearly date syrup or a fruit juice would be a better sweetener from a health standpoint. Just a comment here not a criticism or judgement and I want to thank you for having such a great video!

Tres Leches is my favorite cake too! One of the Mexican markets where I live makes a double layer tres leches filled with either strawberry or pineapple (the pineapple is the best) it is our go to for parties, birthdays, anything really.

Alyssia, I have to tell you, I watched this video 2 days ago & saved all of the recipes. I then shared them with one of my sisters who is doing Weight Watchers because I figured the recipes would work nicely. Let me tell you, my sister made 2 of the cookie recipes in one day, the carrot & the pumpkin! She was so delighted with them. She said they tasted so good & while they were cooking she also remarked on how good they smelled. I haven't been feeling well for the past week or I would have made some too Now after my sister's glowing endorsement, I will be making these too, & I think I'll start with the pumpkin!!!
