I made these chocolate coconut candy bars a few days ago and they were absolutely divine, Adriana. I can't wait to show you a picture of the finished product (not quite as beautiful as how your bars look, Adriana). My entire family were absolutely amazed by the depth of flavor and the fact they are super healthy, contain no refined nor processed sugars (I used Lily's dark chocolate morsels - no sugar added) and they're low carb. They never had a paleo dessert like this and they were extremely impressed. Thank you so much for this recipe!

Hello - new subscriber here! This caught my eye while viewing a different recipe, and I am impressed with the clarity and simplicity of the directions and the healthy ingredients! I am Paleo, and rarely crave sweets, so it is lovely to find a recipe that includes only ingredients and equipment I generally have on hand for those occasional cravings. Made these this evening and they remind me of a mounds candy bar. Its definitely a pain and took forever to process 2 cups of coconut in my food processor. I never could get it to the consistency of peanut butter. I would recommend using store bought coconut butter instead. Also next time I make these I will definitely add a sugar substitute sweetener. For my taste these bars needed to be sweeter. Also I would cut down on the coconut oil by a tablespoon or so, since these had an oily feel. I think with a few tweaks this is definitely a keeper recipe.

Thanks for your feedback. Having a powerful food processor for sure helps to get the right consistency. Using store-bought coconut butter is a great time saver for sure but more expensive too. Be sure to melt the content in the jar, so the oil that rises to the top is mixed with the coconut. Please keep me posted :)

This is my favorite! I made them into fat bombs by using paper lined mini muffin molds. Also, I substituted 1 cup coconut manna (commercial coconut butter would work great, too) for the food processor debacle. Such a mess, and totally unnecessary. SO, FORGET THE HAND-MADE COCONUT BUTTER CHORE, and substitute coconut manna or butter. The mini chocolate chips are such a perfect accompaniment to the coconut, too!

Oi Danielle. Eu acho que sim mas nunca tentei. Quando o leite e feito vc nao esta extraindo toda a gordura do coco então poder ser que o resido vire a pasta também. Se nao consegui vai ter que usar o coco ralado seco (sem açúcar) mesmo. Me diz depois como que foi.

They came out looking like yours and you can't even taste or see the cauliflower. It's a good way to get your veggie intake even if you have to sneak them in.😇

You can use the coconut butter you have in the jar. Melt it, and be sure to stir the content inside the jar before you measure. You'll need about 1 cup. Please let me know how it goes.

Do you have any suggestions (also one that would process the coconut into coconut butter)? Coconut is one of my favorite foods. I make coconut milk using my Ninja personal blender, by adding unsweetened dessicated coconut, stevia and water, then strain, but I waste a lot of coconut this way. Any tips for what to do with that used coconut?

Hi Gaby, any chocolate bar with a cacao content greater than 70%, and that is free of soy should be fine to use in my recipes. Unless you have a severe allergy to gluten, you should be fine if the label doesn't say gluten-free. You can use nuts too if you prefer or cacao nibs. With any of these you can coarsely chop and mix.

The term coconut can refer to the entire coconut palm, the seed, or the fruit. Botanically the coconut fruit is a drupe, not a true nut. A drupe is a fruit in which an outer fleshy part surrounds a pit of hardened endocarp with a seed inside.
