KHATTA DHOKLA
Preparation time : 15 minutes
Cooking time : 15-20 minutes
Servings : 2
Ingredients
For Fermentation
1 cup Kolum Rice - soaked (कोलम चावल)
½ cup Split Black Gram - soaked (उड़द दाल)
½ cup Sour Curd (खट्टा दही)
Other Ingredients
¼ cup Coconut water (नारियल का पानी)
Salt to taste (नमक स्वादानुसार)
½ tsp fresh Green Chilli Paste (हरी मिर्च का पेस्ट)
1½ tbsp Oil (तेल)
½ tsp Fruit Salt (फ्रुट साॅल्ट या मीठा सोडा)
Oil for greasing (तेल गि्सिंग के लिए)
For Tempering
2 tbsp Oil (तेल)
1 tsp Mustard Seeds (सरसों के बीज)
2-3 Dry Red Chillies (सूखी लाल मिर्च)
1 sprig Curry Leaves (कड़ी पत्ता)
Process
For Fermentation
In a grinder jar add soaked rice, split black gram, sour curd and grind it into a proper paste.
Remove in a bowl and keep in a warm place to ferment for 4-5 hours.
After fermented, add coconut water, salt, green chilli paste, mix it properly.
Now take one portion of the batter and add mixture of oil, fruit salt in itvand mix it properly with light hands.
Switch on the steamer, and also grease the mould or the plate then pour the batter in it and steam it for 10-12 minutes on high heat.
Once steamed remove and let it cool a little, then cut in the desired shape and pour the hot tempering on it and serve warm.
For Tempering
In a small pan heat oil and add mustard seeds, dry red chillies, curry leaves, saute for a minute and it ready to use.

Dhokla and khaman are different recipes. There are 2 types of khaman 1st is nylon khaman and 2nd is vatidal na khaman. I like vatidal na khaman. Can u make it?

So excited to try this favorite childhood dish of mine! We always had them with red chili or black pepper powder sprinkled on them - before steaming though. And then eat dipping in raw oil - no tadka. Delicious! One mom tip - flip the steamer tray upside down after getting it out of the steamer - that will help prevent water droplets from sitting on top at the cool.

The difference is basically dahi which was added in the batter. Other ingredients are the same.

Hi chef.. I am Gujarati and and we use Chana daal in khatta dhokla. One more thing we add in this recipe is handfull shok chandal . It give great test to dhokla.now i will make dhokla as per your recipe. Thank you.
