I've been to both Vancouver and Japan multiple times and it's really really good but the Sushi in Japan is just on another level. Actually, for a savory dish, berries seem harder than stone fruits imo - it isn't like a savory dish can't contain sweetness, so the stone fruits would make a really good sauce

As a home cook I make berry reduction sauces for salmon, pork, chicken, and tofu. I probably wouldn't make berries the star of a savory dish, though I've had them in a salad along with tuna tataki. As for other fruits, peach salsa, peach sauce over salmon, pork, or chicken, peach and banana in a coconut curry, and I'm thinking of a sweet & sour soup with cubes of peach in place of the sweet. Grilled peaches with an acidic cream cheese sauce. The first time I made a savory dish with banana the concept clicked.

A Tajine usually takes several hours and berbers even use it mostly overnight. One can use it faster, but does not offer the benefit of slow-cooking and keeping the moist of condesation in tho. So, this is not really suitable for a "pressure test"

When in reality we eat tagine with bread...and couscous is a separate dish... You can cook a tagine faster especially the dry tagines of the north since they are traditionally prepared on an open fire... But one must know which vegetables to use... I agree with you... It's unsuitable for a pressure test...

I think the guy made his own paste, because doing so would guarantee that he knows exactly what its supposed to taste like and the ingredients used to make it. The judge made a point of saying that he DID NOT use the unlabeled spices that the judge's provided. He played it very smart by doing his own thing, rather than guessing at the spices and then losing the challenge if he's very wrong and the judges don't like his dish..

I like Masterchef Canada, judges are better than US but, Contestants are the same with US, trying to kill each other if they can. The format is also copying from the US format, which was about getting advantages to destroy their competitors and subconciously making all the contestants to destroy each other rather than encouraging more Partnership inside a healthy competition. Hopefully coming forward, Masterchef Canada could copy the Best Healtiest cooking competition format, which is Masterchef Australia.

Hake is so not the hardest fish to master, maybe the northern hemisphere, but here in SA (South Africa) Hake is one of our most common fish to cook and get at fish and chips shops. Snoek, Yellowtail and Angelfish. Very common around here, easy to prep and yum.

couscous is cooked on the steam only and the tajine is a little bit different than that but they cook it for the 1st time so nice work !!

how they managed to cook the fish that wonderfully, like, my mom once undercooked salmon for me, she said it was fine, but I showed my dad and he agreed that it needed to be cooked a little more, and then she overcooked it, my mom is a great cook, but now my dad is the one to cook fish

You can do it Brandon! Start by learning how to cook your favorite food and always have youtube as your guide (it helped me) and try cooking for your family or friends. It feels great seeing your loved ones eat the dish youve made. Best of luck!
