I laughed when I saw today's recipe. My granddaughter asked me yesterday to make these for Thanksgiving so I was already planning on doing it today. I've never made these with whole wheat or honey before. Today just the all purpose flour and sugar. Just out of curiosity have you ever used almond flour? I have that but don't always have the results I want, or sometimes the measurement isn't right. Another thing I do, because my mom did it, I make buttercream frosting put a thin layer on the cookies so that sprinkles can stick. It adds a few more calories but I figure if you eat cookies you probably don't care about that.😉

These look more like gingersnap cookies. My Mother used to bake molasses cookies all the time, they were smooth, she'd roll out the dough and use a cookie cutter. Another difference is that she used melted bacon grease instead of the butter. She (RIP) had a family of 9 to feed, so there was always a stew/soup on the stove and there were always cookies, donuts, pies, bread, and the occasional (BD) cakes. Mary, these cookies look awesome, I'll have to try them. Interesting how recipes can differ. P.S. Yours look nicer than what my Mom made, shhhh don't tell. Sorry Mom

After judging and displaying the cooked goods at our local county fair they would put everything up for sale.25 cents a plate. I was a kid and would watch for the doors to open that day and rush in. I would try to buy every plate of molasses and spiced molasses cookies I could afford. No sodas or snow cones that day for me. Those ladies could cook but they didn't share their recipes. Great question! You can definitely make Italian bread with whole grain flour (just sift out about 1/4 of the bran and the germ so it’s not so dense). And you can definitely leave out sugar. I will have to experiment and make a bread like that. Stay tuned. Love, Mary

Gran would put a second baking sheet on a 2nd rack just below the filled cookie sheet and pour water in that one. Not for the full cooking time(that I knew of, maybe she was just topping it up at that last 8 minute mark that we saw...🤷♀️don't know, there's a LOT of things that're only coming clear now that I'm a fully grown adult with some extra life experience behind me...

I have gluten free all purpose flour... any way to substitute with that in this recipe? Also, I use organic cane sugar that's pretty course... so I will powder what goes in the cookie since it is a relatively short bake time, but use as is for the coating. These look delicious!

Stupid questions maybe, but I’m going to ask anyway. Are the eggs used just as a binder? And, if date sugar or coconut sugar was used in place of honey, would the batter consistency at the end of all the mixing still be the consistency of the batter in this recipe, since the honey helps make the batter in this video be a wet consistency? I’m vegan, and so I need to make substitutions. And, instead of leaving the batter in a bowl to chill, is it too wet to be made into a log in parchment paper, then chilled?

All great questions! You do not need to use eggs if you can’t eat them as a vegan. Instead, substitute 1/4 cup applesauce for each egg. If you use date sugar or coconut sugar, yes the batter will be slightly thicker - however, the applesauce in place of the eggs will add a bit more moisture. Either way, the batter is soft, but yes, you can roll it into a log and then chill it. The reason we chill the batter is because if we do not, the cookies spread out in the oven very quickly and become quite thin and crisp - more like a ginger snap. Molasses cookies should be soft and chewy. And these are not stupid questions - they are great questions! Love, Mary

Mary, I am trying this right now, and I copied the recipe on my phone. Maybe I am reading this wrong, but I think you have the dry sugar (instead of honey) as “increased to 1/2 cup”. I think you have 1 cup on the video).

3/4 cup Honey or maple syrup If you want to use a dry sweetener, such as Sucanat, coconut sugar, maple sugar, or date sugar, increase the amount to 1/2 cup. What does this mean? Increase to 1 1/2c? Decrease to 1/2c? Increase the molasses below to 1/2c?

Mary could you and your people pray for Mike of the KZbin channel “on point preparedness”. His little seven-year-old daughter has been admitted to the hospital I believe with sepsis. I don’t think things are looking good at all.
