Healthy Strawberry Oatmeal Bars
Today you're going to learn how to make sugar free oatmeal bars with strawberry filling.
Bonus recipe in this video is simple strawberry chia jam.

Here's what you'll learn in today's video:
First, I'll show you how to quickly prepare oats, combining wet and dry ingredients, which is the base for this recipe.
Next is the bonus recipe, quick explanation on how to prepare strawberry chia jam. Chia is a great, healthy substitute for gelatin and corn starch, and using a couple of tablespoons of chia seeds will be enough to thicken any fruit jam.
After baking, the bars will need to fully cool before slicing. Using a sharp knife cut into squares or bars.
If you want, you can serve these healthy bars with sour cream, melted white chocolate or extra fresh strawberries on top.

STRAWBERRY OAT CRUMBLE BARS
For the oat crumble:
1 1/2 cup ground oats
1 cup old-fashioned oats
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup melted butter
1/3 cup honey
1/3 cup Greek yogurt
1/2 tsp vanilla extract
For the filling (strawberry chia jam):
1 pound strawberries, roughly chopped
2 tbsp honey
2 tbsp lemon juice
2 tbsp chia seeds
Preparation:
In a bowl, combine all wet ingredients, melted butter, honey, Greek yogurt and vanilla extract.
In another bowl, combine all dry ingredients, ground oats, old-fashioned oats, baking powder and baking soda.
Incorporate dry ingredients into wet mixture, mix to combine into smooth and thick paste.
For the strawberry chia jam, in a small saucepan add chopped strawberries, honey and lemon juice. Bring to a boil, lower the heat and gently cook for 10 minutes. Using a potato masher mash the part of the strawberries. Stir in chia seeds, mix with the spoon and set aside for 30 minutes.
In a lined baking pan spread 2/3 of the oat mixture. Press well using the back of the spoon or do it with your fingers.
Pour the strawberry chia jam over the oats and spread evenly.
Crumble the remaining oat mixture over the top of the strawberry filling, lightly pushing into the top.
Sprinkle with some old-fashioned oats on the top.
Bake in 350 degrees preheated oven for 20 minutes.
Let it completely cool down, transfer onto a cutting board and cut into the shapes you prefer.
Enjoy!

I made these with these changes; instead of yogurt, I used oat milk. Instead of the jam, I just cut up lots of frozen mango. CAME OUT GREAT!! Thanks for another winner recipe.

This channel is SO underrated, why are you not world famous by now 😡 Literally every time I try one of your recipes I think, "wow this is definitely my new favourite." And every time I change my mind. Now I have so many favourites it's become so hard to pick one to make each week! This kind of food puts a smile on my face every time, and honestly my afternoons (and mornings) used to feel so sluggish but now I'm more productive at work and feel great because I'm not eating snacks that drag me down. I made these and they were amazing! I used blueberries for the jam, and didn't have any yogurt so substituted in a tiny bit of heavy cream. They came out phenomenal!! And my coworkers were super impressed as well! ❤

Hi! Today I prepared these delicious oatmeal bars and I must say that they are incredibly delicious! I made the exact same strawberry jam and I cannot stop eating these bars 😂 they have become my favorite ones! I take a small piece as a snack once a day and I feel as in heaven, thanks for sharing this easy but most most importantly HEALTHY desserts. I am so happy to have found your channel! Since I stopped putting sugar in my coffee years ago, I've turned to local honey from a 🐝 beekeeper not far from me. Have you tried allulose or date sugar? These are the best sweeteners as they don't raise your blood sugar like honey or regular sugar :) also taste amazing and are pretty affordable.

I made these and they were delicious! Loved that it’s like a healthier version of a berry crumble. I combined frozen strawberries and raspberries for the jam, and made some extra to use in oatmeal/yogurt bowls 😍 Thank you for all your wonderful recipes :)

I made this recipe today and it’s now my new favorite healthy dessert. Thanks for quick and easy oat recipes. #1 fan. FYI - I didn’t put honey in the strawberry chia jam…instead I used orange juice and I added a teaspoon of ground flax seed into the bottom layer of the oat mixture then added the strawberry chia jam.

Wow I just made a vegan, lower sugar and gluten free version of this recipe and it was unreal!! Instead of butter I used coconut oil and instead of yogurt I did a bit of melted vegan cream cheese. I also used 1/8th cup honey in the oats then no honey at all for the jam. I also didn’t have enough strawberries so I used some blueberries. Thank you so much for this clever chia jam idea and the recipe inspiration!! In love with these bars ♥️

I tried this but instead of the filling I used fig preserves. They were the best homemade fig newtons ever! I really didn’t think that small amount of honey was going to make the sweet enough.I use butter instead of coconut oil.Also I rolled out the top layer of dough it was just easier than crumbling it.

Hi Em, thanks for watching friend! The first idea was to make these bars with chopped strawberries sprinkled with some cornstarch or some flour, but I wanted to make it even more healthier. That's where I came up with this chia jam, which is the big discovery to me, I will be using chia for any type of jams I decide to do in the future. Thank you so much dear Lisa, I appreciate your kind words of support! Yeah, these strawberry bars turned out to be so delicious. If you would like to give it a try with the recipe, don't worry about chia seeds, just replace these with cornstarch, I use chia here just to thicken up the jam. Chia is actually flower seeds cultivated in Central and South America, they're healthy and deliver lots of nutrients. It's quite popular in last couple of years and I use it usually in my smoothies, but now I'm learning how to use chia in cooking.

I stumbled upon your channel whilst searching for plant-based recipes. I have been making these delicious oatmeal bars everyday for breakfast for the last week! I can't get enough.. I've tried different fillings and they all come out amazing. You have shown us how to make them now can you PLEASE make another video to show us how to stop making them! I've tried 3 fillings so far 1) Ripened bananas and dark chocolate (95% + Cocoa) (chocolate melted before bananas are added) 2) Blueberries and Maple syrup ( blueberries stewed until tender and jam like) 3) Apples and Cinammon ( apples cooked down until soft) Eating only plant-based means I get to enjoy the natural sweetness of fruits mostly (with the occasional maple syrup/ raw honey added ) and these came out amazingly well and were delicious. Maybe you can try them now and tell me what you think! Lol But again I absolutely love what you've done here. Thanks for such an awesome treat!

Congrats on 100!! 🎉🎉 Wow, I didn't know that chia seeds have this effect!! I've heard that it contains a lot of health benefits but i never tried it before. The strawberry jam looks so consistency and delicious 😋😋 Thanks for sharing this lovely oatmeal bar recipe and the great tips❤️❤️ I need to add chia seeds in my shopping list!

Thank you so much guys, I appreciate it! To be honest, this chia jam thing is quite new to me, I was looking how to replace cornstarch and flour and chia popped in mind, later I saw bunch of recipes using chia this way. Usually I add chia seeds into my smoothies or make banana chia pudding. Compared to couple of years back it's quite affordable today and I think it's a great ingredient worth of exploring.

i absolutely love your recipes! i really loved the apple peanut butter oatmeal bars. yum. and everything is so healthy....except all the butter in some of the desserts. this one looks delicious, but can i use healthier replacements for the butter? could i use applesauce? part coconut oil and part applesauce? i just can't see myself making a recipe with all that butter. :( suggestions? thank you so much for all of your delicious and healthy recipes!

@@Billy_B ( and @sidhwen m) I have given up using recipes with "cup" measurements because no amount of Googling can give like-for-like proper Metric conversions - much like it is not recommended to use metric and imperial weights interchangeably. In addition the Metric weights could be added to the information section, bypassing the need to edit the video. 😁 👍

Hello, thank you for this lovely recipe. Why do we have to cook the strawberries before? Can we not blend them, add honey and chia seed and put the mixture straight on the base and in the over?
