I made this recipe for my 14 month old son and he loved them. (My dog and I loved them too hehe). The only changes I made were, instead of 300g ground oats, I used 150g ground oats and 150g all purpose flour. Also, instead of 170g honey, I used 6 tbsp maple syrup. I also added 1/2 tsp nutmeg besides the 2 tsps ground cinnamon. Thanks for sharing the recipe :)
@PonytailRuth4 жыл бұрын
I just made your wonderful muffins and they came out absolutely perfect. The only slight alteration I made was to double the amount of mixed spice (instead of cinnamon) and add some fresh lemon juice to the apples to stop them going brown. I also added a little finely grated lemon rind as we like the extra flavour. Many thanks indeed for yet another brilliant recipe.

Hi! Thanks so much for making these and sending over your feedback! All your changes are absolutely to the point, love them all!

Finally made them today! I used the apples from my garden and made some changes to use stuff I already had. I used Skyr instead of Greek yogurt and cut down the honey to 90 grams. After tasting I think I could have even gone lower, but I guess it depends on personal taste and the sweetness of your apples. I added 10 grams of ground hazelnuts as they pair so nicely with apples. As I didn't have coconut oil, I substituted with regular butter. With these adjustments I ended up with 12 muffins at around 180 kcal each.

Hi Lisa, thank you for your kind support as always! Lately we've been all about the oatmeal muffins and cookies, kids just keep asking for more, and I love them for quick breakfast. These triple-apple muffins were just delicious, but have to say I was disappointed with these muffin liners, I think I won't be using any liners in the future. I've been doing fine, just can't find time to upload videos more consistent. What about you my friend, how are you doing lately?
@Lisa-ServantOfChrist5 жыл бұрын
@@HowToCookSmarter I see, I wouldn't use the liners then. I'll just grease my muffin pan instead of using liners. My favorite apple is the golden delicious apples. Do you think that will work for this recipe? I wish you would upload more videos per week but I know you're busy with work and family. I've been good, next month I'm due for the baby to arrive 😱😁
@HowToCookSmarter5 жыл бұрын
@@Lisa-ServantOfChrist Liners do make prettier muffins, but it just doesn't work for me, so greasing the muffin pan will be just fine. Yeah, golden delicious are just perfect for this recipe, we love them too, I just choose to use Fuji apples because I love them most, anyway the apples should be sweet because I limited the amount of sugar (in this case honey) for this recipe. I'm so glad to hear this, you're going to have a baby around Christmas, the most beautiful present in the world. I wish you the best of luck!

Two q: 1)What would be a good alternative for Greek yogurt (my wife does not eat milk products for medical reasons) and 2) how do you do the toothpick test? Awesome recipes, thanks a lot for your content!
@jennanelson29934 жыл бұрын
1) a non-dairy yogurt would be the easiest alternative if available to you (coconut, almond, soy) 2) for the toothpick test stick a toothpick into the middle of the muffin to see if it comes out clean. If it comes out clean (or with small crumbs) your muffin is baked! If there is batter stuck to it, your muffins need to bake a little longer

Would love to hear from you about this triple layer of apples. Also wanted to ask you about my healthy baked good which I make with oats. Oats really are the ultimate baking hack. Its healthier, more easily digestible and more fibrous than white wheat flour, but still moist and without the fibrous mouthfeel that you get from other whole grains.

You're so right, definitely a baking hack, and I also love it's kinda sweet and nutty flavor, I even find it more delicious compared to all-purpose flour.
