HEALTHY WHOLE WHEAT BREAD WITH WALNUT AND CRANBERRIES

【Ingredient List】
Pre-ferment (Sponge):
¾ cup + 2 tbsp Bread Flour (All Purpose is NOT recommended)140g
¼ cup + 3 Tbsp Warm Milk 105g (Can be substituted with 100g of water)
1 tsp Instant 4g
Whole Wheat Dough:
1 ¼ cup Whole Wheat Flour 200g
½ cup + 3 tbsp Cold Water/Ice Cold Water 170g
The Final Dough:
The pre-fermen t(sponge)
The wholewheat dough
2 tbsp + 1 tsp Sugar 30g (Can be substituted with honey, molasses, or maple syrup, you may use more or less sugar here)
2 tbsp Softened unsalted Butter 30g
Salt 3g(½Tsp)
Nuts and Fruits ( your choice of nuts and Fruits)
20g Cranberry
30g Whole walnuts
20g raisins
Toppings (optional)
Pumpkin seeds
Sunflower seeds
Sesame seeds
Bake in a pre-heated oven at 180°C for 45 minutes. After 20 minutes Cover the top with aluminum foil and continue to bake for another 25-30 minutes.
