In my place we call it Ngwongwo and we don't use the goat head alone. We also add the offals of the goat and some meat with it. However, we don't usually add ukpaka or ugba to it. That, is another dish on its own or in combination with nsisa (dried sliced cassava strips or the wet version of it called abacha). We can also use the broader sliced version of the cassave, called mpataka but this is most favoured eaten alone with coconuts or groundnuts. I suppose that different parts of Igbo have varied combinations and versions of these ingredients, and they have different names for them. All in all, I believe the main base for these recipes is the sauce, the potashed oil called ncha, which to me, serves the same purpose as the salad cream to a salad.
