My mum makes the best moimoi ever and i am so proud to say I learnt how to make moi moi from her and I learnt well. If you are looking for a recipe that is guaranteed to give you soft like butter, delicious and perfect moimoi then you have no business with any other moi moi recipe. This is the one.😀. Finally someone using the Matt side of the leaf and not the shiny/glossy side. The cracking and stripping of the midrib not only gives flexibility but also gives an extra intense infusion of chlorophyll into the moi moi. Good job 👍🏾

The more I watch other ppls food, the more I believe we are all one BIG BIG family living in different countries. Moimoi in Hawaiian means to sleep. So if someone says “I’m going moimoi” they are saying “I’m going to sleep.” Or if you are trying to put your son to sleep and refuses then say “Boy go moimoi”

The water should be enough to cover half of the first set of moinmoin...not cover it fully. You should add the water in bits as you cook so please don't be too far away from your pot. Let me know how it goes😊.

You don't have to use leaves. You may use small foil containers, ramekin dishes or any small dishes. Alternatively, use foil sheets cut and folded down to approximately 4 by 6 inches. Fold opening thinly 3 to 4 tines to seal well and avoid spilling into pot. At each corner triangularly, approximately, half an inch be folded down. This is to further help to hold fold in place.

@God is my help... Most times it changes the color of the moi moi to a darker shade over time and sometimes you might not get the authentic taste of the moi moi.

Preparing it with the skin of the beans gives a rough texture. Although there's another recipe-completely different-with the whole beans which has a shafty texture ..its called a difference name which I can't remember right now

I am sure you have eaten worse at restaurants and other people’s house without even knowing. If she did not do this presentation, you wouldn’t know she has long nails. I have cooked with long nails for over 38 years and has gotten the best compliments from people. I seasoned my food much better than those who had no nails. I wear gloves when I clean and seasoned my food. Some people has no nails and their food is tasteless and nasty. Don’t judge and as the saying goes “If you don’t have anything nice to say, don’t say anything at all!”

Has any one managed to figure out just why we have to remove the skin of the beans? The presence of all the foam in the washing water shows the presence of protein, which we are washing off so the moi is just carbs, minus the fibre from the skin.

You can always use your palms to peel the beans. I prefer that to using blender. And you can even use a small mortar and pestle.
