Hey y'all I made a super quick Vegetable Soup for supper and a Lemon Cream Pie for dessert. The lemon pie recipe you can find here at this link www.collardval... ( www.collardvalleycooks.com) and the Vegetable Soup recipe I did today is this
Quick Vegetable Soup
Ingredients
1 can (28 oz) Veg-All mixed vegetables, drained
1 can (28 oz) diced tomatoes
1 lb ground beef
32 oz V8 vegetable juice (half of a 64 oz bottle)
Salt and pepper to taste
Directions
In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the diced tomatoes (with their juice) and the drained Veg-All mixed vegetables to the pot.
Pour in 32 oz of V8 vegetable juice.
Stir everything together and bring to a boil.
Reduce the heat to low and let the soup simmer for about 30 minutes, stirring occasionally.
Season with salt and pepper to taste.
Serve hot and enjoy!
This soup is perfect for a quick cozy meal. If you want to add more flavor, you can throw in some garlic, onions, or your favorite herbs and spices. Enjoy! 🍲
