@Patrick94GSR7 ай бұрын
Ditto, been using my Venom for a couple years now. Many cooks with it. I now run pork butts overnight so I can pull it off in the morning and give it a long heated rest. That way I can pull and serve it whenever I want and not have to worry about it being ready for dinner time.

Thanks for sharing. I am one of those who setup the snake in the weber to make it look nice. But how you set it up is actually way easier from what i see. I have a party coming up and will most likely be smoking up a 10-12 lb porkbutt. Will it be about a 10-12 hour cook? Also I always use Kingsford charcoals, i guess there no difference in which charcoals to use when setting up the charcoals like how you did? Last question, the top vent is that left wide open on the lid?
@HeathRilesBBQ19 сағат бұрын
Thanks for watching! Cooking time depends on the weight and temp you're cooking at. You can use whatever charcoal you prefer using the same method. Doesn't apply to just Royal Oak Charcoal. As for the vents, adjust them like I did, but you'll have to adjust based on the temp.

Would it get more smoke if you put the vent over the meat? Or what are your thoughts on that?
@Patrick94GSR7 ай бұрын
Vent always needs to be above the meat for the best smoke flavor. And the lid really needs a thermometer down closer to the bottom edge, in line with the vent. The stock thermometer location is fairly useless.
@HeathRilesBBQ7 ай бұрын
I had it on the other side of the pork butt with the vent 1/4 of the way open.
@BrandonCarder7 ай бұрын
Heath - I have always heard that smoke only penetrates the meat for the first 1-2 hours. I've done butts / brisket / etc on my kettles w/ snake but only throw a few chunks on near the beginning of the snake. The snake will take quite a long time to burn around. Does pork take on more smoke after 1-2 hours? Just curious!
@HeathRilesBBQ7 ай бұрын
There was a really good smoke, grilled flavor with this pork butt. Our snake method was still going strong after 10 hours, so I'd highly suggest using that method.

I always do my pork butts on my 22" WSM. I can do between 4-6 of them on it, and just vacuum seal them off for friends, and family. All the pros seem to be partial to the drums though. Is that common from your experience? Because if you're telling me I need to buy a drum, I'll tell my wife, "Heath Riles said I need a drum!" haha Also, that pork looked incredible! Nice job with fire control on the kettle!
