The Kamado uses less charcoal and with the little bit of wood you used for such a long cook makes quite a bit less smoke. That's why the different smoke profile.

They should be at least giving you the equipment to test and review. Because it's what you're doing. Write to them and let them see a few videos and I'm willing to bet one of the companies helps you out. You're just as good as anyone else out there Buddy! BTW. Is it really this easy to grill with these higher end grillls because good God would I love to set it and well not " Forget it" but just not be messing with it and worried about the coals going out.

@@GetToughOrDie Honestly after much research I've come to the same conclusion: you can get excellent results on a quality charcoal grill like the Weber kettles, but kamado-style grills seem to require a whole lot less "babysitting."

If you can't pick, then I say the winner is the 26.75" Weber because of the price difference. Imagine spending $1200-2000 for a Summit only to find it tied with a $400 kettle.

Absolutely fantastic video Justin! Both Webers performed beautifully. I have the Slow & Sear as well, and was impressed by it. I see they have added a bottom grate to it now. Mine doesn't have that. First addition I suppose. I totally agree that it would be a very hard decision to make on which pork butt had the best results. I loved the looks of the one Weber 26", but as far as flavor goes, I prefer a subtle smoke flavor as though I was using it as a seasoning which I think the Summit achieved, but probably not enough difference in either one to make that call. Awesome video!

"smoke as a seasoning" would've been a great way to describe it in my video. Dang it, that's why you don't film KZbin videos at 2 o'clock o'clock in the morning, Right? LOL I asked him about the SnS bottom plate. They came out with a 2nd model that has the bottom for the 22 inch kettle. They didn't actually replace the previous design, now they have two versions of it so people can pick what they want. When they produced the model for the 26 inch kettle, they decided to go with the one with the bottom. I'm glad they did because that's important to me. Thanks for watching, Rus. Slow and sear looking way too dark at only 3 1/2 hours. That's creosote. The Summit is definitely putting on better quality smoke.

I compare everything to my kettle. Electric smokers, propane, egg shaped, whayever. The value and quality of the kettle always wins.

I must mention, that was a beautiful time elapsed shot of the sky! Both shoulders were beautiful too! Not sure which one I'd pick. I'm sure that they were equally tasty. That Summit is a awesome grill, but budget would dictate that the 27" Kettle wins. TFS, Jason......I mean Justin! 😉

Really like your vids. I have watched several and ended up going with Weber E6 instead of ceramic. Watching this I kind of wish I had gotten the S6, but another $1,000 for a cart and a starter was a bit much. You deserve some paid sponsorships!

Justin, fantastic video and reviews! In all of the kamados I've had, none have ever produce BBQ as good as a Weber. All had the same issues you pointed out, more of an 'oven cooked' pork in the kamados and the Webers produce more of a real BBQ pork.

Really good cook! I wouldn’t be able to pick either. It is obvious why the Slow and Sear put more smoke on the pork butt due to indirect cooking and the vent being over to the left of the fire forces all the smoke in one direction resulting in more Smokier look . Really love your channel. I purchased a Summit Charcoal because of your channel. I’m looking at a 26.75 now an plan on rigging it up with the Slow and Sear, since the don’t make it for the Summit any longer. I have rigged up my Summit with Kick Ash Basket stainless divider that fits the XL BGE and offset cooks are real easy. I am currently working with a builder to have a rib hanger for the Summit that will be used while hanging ribs directly over the coals. Smoke on brother 👊🏻

Your videos aren’t just educational but entertaining! Really enjoyed this one! Great job! You along with others are the reason I bought a Summit. ALL the reviews, and I mean all I have seen on the Summit state how much they love the grill. I am now in that group. No doubt, it’s the best grill I own! Way too much money but boy I really love it!

@babybackmaniac This guy is awesome. His videos are great quality and have no fluff. I like how he edited out or didn't record the stuff that doesn't matter (others record EVERYTHING). His bit about the"un-boxing" was gold. When he said he had added the un-boxing vid to this vid, i was like "here we go" and started to fast forward. So with my summit I found that not using the defuser plate and adding another grate in its place plus setting a water pan under the meat helps with color, smoke and tenderness. I think that defuser blocks a lot of the smoke

26.5 has no diffuser plate. color would be different as well as flow of heat.

Hey bbm I just went to prep my summit for some burgers tonight and discovered that after cooking pizza's last night the inside of my grill is clean. Clean like when you run your oven on self clean. The grill, deflector plate all cooked off to ash. Very cool side effect from grilling pizza!

Yep, that's what's great about it. One of the things I like about it is you don't have to worry about it cracking a ceramic firebox like with some of the other companies. (Not a knock on any of them...just differences).

So both grills went for 6+ hours on the sama charcoal? The kettle is easier to add coals, would be interesting to see how you stoke and add coals to the other WEBER...

There’s a hinge on the deflector. Now I just use a slow and Sear in the summit too.

Have you ever tried a hot and fast brisket (4-6 hrs at~350 degrees) in either the SCG or 26" with. SnS. I do this in my Kamado and was wondering if either of these could do that. If so I'd sell my Kamado and get one if the Weber grills

Justin, I watched this and laughed...You've made it. :) I recently (2 weeks ago) bought the Weber 26" kettle so I'm searching out vids for it. This one you were hoping for sponsorship and BBQ toys and soon after (relatively) you created several videos on the ABCbarbeque.com website promoting the SnS and doing vids with David P. . Congrats from watching your channel for the last couple years I don't think you'd promote something like the Mav XR50 or SnS if you didn't use and enjoy the product. I've only got one cook in on the 26" and since then got the SnS. I'm pretty sure it will live up to the hype.. if not it will last as long as the kettle does.

KZbin University taught me WAYYY more than 120,000 in debt University. So brother, I feel you. I still thought it was well done. You've always had a mindset for the editing, and maybe you weren't as good then, but you knew where you wanted to go, and that all that really matters. I realized many don't place much emphasis on that because they aren't that good. But we all suck at one point. Once you can get out of that phase, its just as fun as cooking, or eating, or using cameras. I respect that!

IMO a Weber kettle is bomb proof and a great grill weather cooking direct or indirect, I also love my WSM . Now do you think it was a smokier cook on the kettle because the coals were higher up than they would be in a basket?

I own the weber with the slow and sear. I personally love bark but my wife prefers less. But the webber kettle is a all round great choice cus i use it for grilling as well and its more portable for camping.

Nice side by side comparison. Keep up the good work. Your videos are really good. I have been experimenting with pizza on my summit and would definitely recommend you try it. I went with a full size pizza stone so we could do large pizzas in stead of buying the smaller one that Weber sells.

Nice job Justin. I bought a Kamado Joe in December for cold weather cooks here in Northern Michigan... also have a Weber Smokey Mountain. Like your experience I find there is much less smoke flavor on meat cooked on the Komado...still good but different. Keep up the good work!

Yep. I think the advantage of the kamados is the versatility but if you want a smokier profile, the WSM just naturally does that due to the air flow. How does the WSM do in cold weather? I've heard some people complain and some say it works fine as long as the wind isn't blowing. I'm in Texas so it only drops below 20 once or twice a year...and we freakout and start wrecking our cars. lol

+Baby Back Maniac WSM is okay in the cold but uses alot of fuel to keep the temp up, kamado much more efficient. Since it snows here 6 months a year I decided to give the KJ a try ☺.

If you can’t pick let me help you. According to you the flavor is great on both and it shouldn’t be too hard to adjust the smokiness. The Webber with the slow and sear cost $429 and the Summit is $2000. I think I’ll save $1570.

So I was planning on getting a Summit for myself for Christmas. I currently cook on my kettle about 3 times a week and have done so for nearly 2 years. Is it worth the expense? I like the features but with so many add on's to the kettle I can nearly do all the same things. Although I want the Summit status. What do you think?

That's a tough question. I'm a kettle guy at heart. I think it depends on what's important to you. The main benefit of the summit is its versatility. Therefore you can cook everything on it without a bunch of add-on equipment. Plus there are certain advantages to the summit that I really enjoy but most of them could be summed up as "conveniences"... Not necessities. If you're of value oriented person, I don't think you can find a better set up then the 27 inch kettle next to a weber smoky Mountain 22.5 and it's one third the price. And some food is actually going to taste better coming off those grills anyways. That being said, I really like my Weber Summit. I wish it was about $500 cheaper but I would buy it again in a heartbeat. I have owned a lot of grills over the years, and this one checks off most of the boxes for me. I know that's not a straight answer. I guess you just sort have to decide what's important to you and go from there.

What were the internal temps when you finally pulled them off the smoker (post Texas Crutch)? 205?

I honestly don't remember. I usually go until they are probe tender and that is usually between 198-205 but if I didn't say in the video, I definitely don't remember now. Sorry, it's been a couple of years.

Out of curiosity, how much of this do you feel is down to "dialing in" technique? If you had more of a water pan and less wood to smoke in the kettle, do you think you could have achieved the same results (taste wise)?

All of it, my friend. I think this is a pretty good indication of the starting point with both cookers though. Great question.

yeah, definitely a good starting point! something else occurred to me - the black may just be from the sugars in the rub. if you swing the temp hi/low and it just averages out (vs a steady temp in the summit) it might be enough to burn/crystallize the sugars and turn them black over the life of the cook. too bad you couldn't do one in a kamado and one in a pellet grill all at the same time! :D

Weber kettle all the way. The value for the money is insane. Obviously if you can afford you buy anything you want.. But i got a 22'weber premium and my god I love it and dont regret it.. I cook for 4-5ppl at most and I can smoke anything I want.. Big enough brisket.. Pulled pork.. Buy rib rack and fit up to 4 racks easily.. Easy to move around.. Cleaning process is simple.. I also do love babysitting process rather then leave it and forget it.. So its perfect for me..

Fun fact. My Weber kettle came with two of them charcoal baskets which will hold as much or more charcoal as that expensive slow and seer. Just saying 🤷🏻‍♂️

I'd love to now how all you Barbecue Tubers touch your grills and grates barehanded without coming off looking like you've been playing in an ash pit. Every time I finish a cook on my kettle, I brush the grate off while it's hot (often both the top and bottom of it), and the next morning I take the top grate off, dump the charcoal, take the bottom grate out, sift the ash, then use paper towels to brush the loose ash into the ash catcher, use the brush / scraper to get any stubborn stuck on stuff and then do the same with that, then reassemble the grill before I cover it, so it's all ready for the next cook. If I pick up my grill grate my hands are going to look filfthy, and be covered in grease.

You went to a lot of trouble to make this nice video and smoke this pork, only to use Smithfield super market pork shoulder from factory farmed hogs. Do yourself a huge favor and buy good meat. Somebody near you raises hogs responsibly and somebody butchers them and sells it in their shop. You’re gonna pay a little more but it’s well worth it.

Can you say more about adding water in the kamado? I've seen it almost universally recommended to not do that as it is already so humid in the kamado. That said the first pork but I made on my Big Joe 2 was dry, so....

great video. Hard to find any like this, and it's really helpful if you're looking at maybe buying a new BBQ. I personally prefer less smokiness, so the Summit may be preferable. I'd love to see a similar video with the Summit vs KK. Thanks for posting, and thanks for getting back to some longer cooking videos. your hard work is appreciated.

I like making the longer videos but the shorter one help me practice the process (I'm still very new at this whole world so I need reps. lol) Great suggestion about the KK. I may try that in the future. The KK has less airflow that the Summit so it will probably be even more on that lighter side. All of it its good though. Thanks for watching.

The tie breakers for me are a more robust smoke taste and the ability to add or take away wood chunks. The kettle slow and sear seems to do that with ease but with the komado you would have to tear the whole thing down to add or subtract wood.

The price difference is pretty compelling as well. On the flip side, the Summit is more versatile and has more convenience features and there should be a Slow 'N Sear available for it soon. Thanks for watching! Justin

Have you heard of a startup product on kickstarter for a pellet cooking attachment for a 22” Weber kettle. How do you think that will cook? I’m interested in giving it a shot but the price is too steep for me

Hey dude, love your video's i'm from Holland A.K.A. the Netherlands and love pittmaster X also, you guys make real objective video's which are very usefull to BBQ-ers. I'm still in doubt which i should choose ...the kamado joe big Joe or the summit charcoal. I noticed you used a fully cast iron grate on the summit but can't seem to find it anywhere in the Weber webshop is this made for the summit or did you get it off some other grill? P.S. about this video... i think that if you set up the Summit( without diffuser plate and with the included char baskets and a cheap aluminium water tray, maybe put some fire stones or bricks between them for side heat control) in the same way as the kettle you'll probably get the same colour and smokey taste that you missed in this test because i think the most smoke wasn't really getting infused( like in the kettle) into the meat because of the diffuser plate. Also i think the kettle works perfect in the summer with high outdoor temps, but i think in wintertime the Summit will show it's price worthiness better(although i think it's still way to expensive) in a simular test, Don't you think so? I think that's the reason why the sear and slow is not sold in Holland ( because dutch people are very economic, not to use the word 'cheap') because the same effect can be achieved with the char baskets and waterpan with some slight adjustments. Instead of paying at least a 120€ for just a charcoal holder with water reserve ( which it basically just is).

What do you do when you need to add coals to the slow and sear? I don't want to get a bunch of dirty smoke from fresh coals and I don't want to put on a bunch of hot coals and drive the temp too high...

This video made me decide what to get the Webber 26.75 with the SlowNSear XL. You don't have to break the bank to get the same result. Awesome video.

I see the BBQ guru vent sticking out the side of your 26.75. Do you think it's a good purchase for that model? Also, do you orient the coals on full blast over that vent attachment? Are there any issues?

Temp controllers are really cool and they make great insurance policies but if you don't want to spend the money, you don't have too. On long low and slow cooks overnight, they are nice to have.

Does the BBQ guru's silicone plug need to be removed when you're going full blast with searing on that side of the Kettle, or do you sear on the other side when the time comes?

If you like to make large batch , one key thing with the summit is that you can double the amount of butt , also the color of the meat can be more appealing to a lot of people

Great video , just looking at a Summit charcoal as been cooking on gas Weber’s for 10yrs. Only thing is in Australia these don’t come with the coal gas ignition option like US.

Was the Summit pork less smoky because it had a full pan of water instead of just the smaller water pan of the Slow-n-Sear? I know SnS holds a lot of water, but maybe it's more about the surface area of the water surface (no pun intended)? I'm curious because I only have a Weber Kettle, no SnS, so I would be using the water pan like you have in the Summit. I'm just curious about it all because I use the snake method with my charcoal and one time while cooking a tri-tip, I forgot the water pan and it had such a strong smoky flavor that it wasn't our favorite. I am trying to identify if the water pan makes the difference, the cooker style itself (kettle versus kamado), or should I just wrap my meat earlier to reduce the smoke flavor?

Great video (i know it's old, but hey, I only just found it) I am trying to decide on whether the next bbq I add to my collection (after getting a weber GA) will be a regular kettle with lots of toys, or the weber summit. I was thinking a kamado Joe, but every other post I see online is about the ceramic breaking, and I really liked your 1 year breakdown of the summit. So can I please confirm, is that just a regular Weber kettle, but with the slow and sear XL?

Hey, had looked at this before, but now looking at it trying to decide if I want to get the 26" Kettle and add a slow n sear at some point. I am assuming I could put a pretty big brisket on there with a slow n sear. Was wondering how many slabs of ribs could fit with the slow n sear in place. I enjoy your channel. Really well done.

I've never seen a brisket that wouldn't fit. I've never measured the number of ribs but I would imagine you could get a lot if you are willing to use a rib rack or 2 (stand them on end.) It's a great setup.
