I totaly agree with you in this matter. While Barbie was no saint overaul, in this particular episode Tiffany was using her as a scapegoat for her own mistakes and acted like the cook of some small restaurant by the road were any care on presentation is seen as an unnecessary thing, despite the fact that the season was already in the middle and she should have known best. Barbie at least was trying to produce food up to Ramsey's standerts.
