Ramsey had a terrible childhood with an alcoholic dad. He became what he is by running away and trying to throw himself into a job that would distract him from all that shit. As such, he always has time for the underdogs, so long as they're honest, willing to learn and don't let their pride or ego get in the way. There's a number of UK Kitchen Nightmares where you see him utterly obliterate false mentors but elevate the junior chef to high heavens.

Totally; he was ready for a tirade, and then you see all the heat drain out of him in a moment. He was shocked and confused at first when Salvatore bluntly said "no"... but when he heard the story, you could see his whole demeanor change. He respects honesty and hard work, and Salvatore showed that he has both in him. Wonderful moment.
