Dunno if someone has already suggested this but, try this, when you’ve halved the cray, got ‘em in shell down, throw the garlic butter in straight away along with a splash of some sweet white wine, then cover the pan with foil, cook on medium heat, you shouldn’t need twenty minutes that’s too long(for south coast nsw cray anyway). When the flesh is almost cooked through, crank the heat up and flip ‘em, then when you take them off grate a little bit of Parmesan over the flesh. Good recipe, keeps the flesh really soft. Love your work though dude, beautiful scenery. Do you get abalone over there?
