I think you need to make forward production as well. You don't want to: "risking one villager is too dangerous when 1v7." But you need to be hitting players to keep their forces at home. If you can get five enemy knights to chase one knight of yours, that's five knights you don't have to fight in your base. Repeat 5x, and that's 25 knights you don't have to fight. Better to have one villager walk across the map in late Feudal, guarded by a scout or two, than to have all knights from a stable in your base run all the way across the map in Castle age to raid. The point is that instead of keeping your army together for villager kills, you just focus on being threatening. Make your opponents overreact. (Or punish them for underreacting.) This is classic Sun Tzu, Art of War, btw. A second thought: make two monasteries and keep your monks alive with walls. You should never lose a monk to a melee unit. You think monks are too powerful in AoE2, right? You just have to build and keep a mass of them. If they don't train and attack with knights, this could be a losing investment, but 1v7 someone's probably going to make knights. And while you have a forward villager, you can start doing crazy things that no one ever does, like build a gate into a random woodline to escape to (better with cav archers than knights), or build a gate between two close woodlines that you can run through with your single knight to escape pursuers who have to go the long way around.

Here's only buff of +50 vils per extra enemy did nothing for him here, +100 was too powerful (when he gets enough pop) but it really depends on how aggressive the enemies are early-mid game, so I wonder what would a good buff be for then
