Once for a wedding gift I made herbal vinegars and oils and put in a basket with other items and the bride was delighted. Some rubs and your wonderful salt could be added too. I have a neighbor that would love this for a gift!!!

@slayer7160 Rosemary and thyme go well on most meats. This salt would be great on roasted potatoes as well. Grilled things and Mediterranean dishes would be good too.

My experience is that when matel mix with salt, if you don't use it up soon, the jar will corrode with rust. Store it in a really dry place, eg, your fridge. or a dry room. It's a really important point to note when you live in humid countries.

Vinnie Sutra there’s better bread. Look up long fermentation bread and you will make the most gorgeous artisan breads with little work in your oven.

@lovecandieee Well, I guess You could use this receipe for that purpose also. But instead of rosemary, maybe something like lavender or rose flowers or so may do it better. And, in case You want to be on the safe side: better don´t use metal lids. Metal looks nice, but due to the salt it may corrode, if You store the container in Your bathroom.

@carbine36 depends what you mean by 'work'. it would certainly have a distinct aroma but I doubt you could get high off it. Depends who you wish to give it to :)

For this recipe, what size jars did you use and how many could you fill? The smallest mason jar we could get is an 8 oz, and I have a feeling 1.5 cups ofherb salt will fill the whole jar up.

can you let the rosemary dry first before doing this? Or fresh is better? And if it is fresh, do you have to dry for a few days before placing in jars? i thought it would get moldy if not completely dry.

@Hewhosmokeswomen yes it will ruin it! because oven is an air-tight container, think of this if you put a raw steak in it will it come out to be a piece of jerky? you might want to test it in a microwave.

@Hewhosmokeswomen not because of the heat, it will mess up the flavor because drying herb salt is like cooking with a lid on versus drying it under the sun. Due to the fact that the oven is a closed container with no ventilation. Think of this, to reduce the liquid of any sauces you would have to turn up the heat and take off the lid just so the water can escape, and in the oven is like turn up the heat with the lid on. That was my logic, I could be wrong you should try a small batchout yourself

@faylinameir: Very nice gift. You can even specify it to the person you're giving it to. I once gave my mother in law a basket to make her own 'boerenjongens' (raisins on brandy, google on 'boerenjongens recipe' and you'll find it on food(dot)com. She was really happy with it.
