People pay huge money for AP, Patek, ect for their finishing and quality. When you get a watch re-polished, don’t you “lose” ALL of the finishing from the OEM? This is something I never really understood with high end watches. It would make more sense to send it back to AP for a factory re-finish.

For rare vintage watches early 80s and older yes, collectors don’t want it polished. For modern watches especially regular stainless steel, polish is fine. It removes most scratches and make the watch look like new again. Only someone in the business can tell if a watch is polished on inspection and they don’t really lose much if any value. Grey market dealers polish almost all modern used watches before they sell it, it makes them that much nicer looking. Only certain specialty non-metal watches can’t be polished like ceramic. Factory refinish = they do exactly whet this guy does, except charge 3x more. You send it in to get authenticated more than anything if bought a used one with no papers, or if certain parts are damaged and need replaced. Otherwise there is no reason if you have an experienced watchmaker whose familiar with the watch model locally that can do it for cheap

Because "before" is "after."...look at the screws near the glass at the beginning of the video: the are not "radial" aligned. So they are in the "after" screenshot.
