Levi's Mushroom Soup
(all ingredient amounts are approximate, adjust as desired!)
1 tbsp cooking fat of your choice (we used tallow)
1/2 medium onion, diced
1 red bell pepper, diced
3 celery stalks, chopped
8oz mushrooms, chopped
4 medium boneless, skinless chicken thighs, cubed
2 tsp Redmond Season Salt
1/4 tsp creole seasoning
1 1/2 tsp dried thyme leaves
1/2 tsp granulated garlic
1/2 tsp granulated onion
4 cups chicken broth
3 large carrots, chopped
Salt and pepper to taste
Over medium high heat, saute the onion, bell pepper, celery and mushrooms in the 1 tbsp cooking fat of your choice until the onions are translucent, about 3 minutes. Add in the cubed chicken thigh and cook until no longer pink, about 5 minutes. Add in all of the seasonings, broth and carrots and stir to combine. Reduce the heat to medium, cover and let simmer until vegetables are to your desired tenderness. We cooked ours for about 15 minutes. Remove from heat, and add salt and pepper to taste and enjoy!

It was really good! He is very much against potatoes in soup so we didn't add any of those which made it fairly low carb too!

Hi~ Levi is such a joy to watch! His youthful enthusiasm is infectious. Love watching him cook! That rooster looks healthy... not that I know anything about them or chickens, for that matter.🤷 Recently, I started contemplating getting chickens for their eggs. I decided not to. May we have a tour of your 🐔 chickens' "home"?🙏 Now, I am renewing my vegetable garden by growing plants from seeds. That & my darling Husky (currently blowing her coat) will surely keep me busy enough. A COSTCO run is in my near future as my freezer & fridge are empty enough I could sit in them... though I wouldn't... just emphasizing the space.😉 Thanks for today's video!🙋
