I canned 10 pounds of chicken breast yesterday. Next is an 8 pound beef roast that I will chunk up and can. Then working on ground beef and stew meat to can. If I get a good deal on potatoes I will slice and can those. I see you are from Independence! You are the first local person I have seen with a KZbin channel. I am in the KC Northland. I began this journey about June of 2020 when I learned to can and make bread from a few KZbin channels during the shutdown. Nice to see your smiling face!

Well it is nice to meet someone so close to home! You should come visit sometime. It sounds like you are doing an amazing job on this challenge. I need to can quite a bit of meat myself. Yesterday I canned 7 quarts of 15 bean and ham soup. Today I canned 3 jars of 15 bean soup, 4 quarts of pinto beans and sausage, and 1 quart of BBQ pork.

Yes I am doing challenge. I put up 5 quarts potatoes and dried basil. My garden is small so I have to source from elsewhere. Thank for showing your work.

Hi Penny, that's a great idea to roast and freeze fresh garlic. I'm dreaming of having chickens soon, and water-glassing eggs!

Hi Shari! I love having it on hand. One of my favorite sourdough breads is roasted garlic and cheddar cheese. I just pull it out of the freezer. Let it thaw a little bit and put it in with the wedding ingredients and the cheese and with the ingredients and man oh man! 😁 I can’t wait until your dream comes true!

I put up 7 qrts pork , 7 qrts chicken , 14 qrts Mexican pork veggie soup, 12 pints of dill pickles and I dehydrated 2 pineapples... I didn't even know about this August challenge... LOL, I'm on track. ❤

🤣 Laura, you are way on track! I’m going to tackle some meat probably next week. I’ve got a lot going on this week that I need to take care of first. How did your pineapples turn out? I don’t know that I’ve ever dehydrated pineapple. Do you have to dip it in lemon juice or anything first? Thanks so much for commenting and letting me be a part of your life! 😁

@@OpenHandFarm The pineapples turned out great, no lemon juice. I slice them thin and dry mine like a chip. It took some of the thicker pieces approximately 30 hrs.

Hey Penny. Happy Sunday. Just waiting for Jon to come back from catching a couple of escapee sheep!🥴 Great video. I'm making my own rules for the challenge this year as I don't have my garden as I think you know so not pressuring myself. However, I'm going to try and preserve something on the week days. I have plans next week to make salmon patties using up shop bought potatoes so that we can have the ones now coming out of the garden. In the freezer I have some stewed apple to make into cakes or muffins. I do have mint and sage in the garden to go in my little dehydrator and some butternut squash in the pantry which I bought when on offer and hope to blanch that and freeze for adding to stews in the winter. No pressure canning for me so have to be creative. I have had no time to go looking for blackberries with preparing for and going on our holiday so I really hope to find some near week. Happy Sunday to you as well Louise. I hope Jon finds the sheep and they are well. I think making your own rules in this challenge is absolutely perfect! Even if you preserve something once a week, there would still be things on the shelf at the end of the month. It sounds like you’ve got great plans though and it all sounds delicious! I hope your holiday was absolutely wonderful, and good luck finding those berries! It was so good to hear from you! 😁

Great start that makes me excited to learn even more. I never heard of squash pickles but seems I should have! They would be good in salads, and on sandwiches, also. or pizza even. Seems squash would be squishy but that does make them perfect for these types of dishes. Thanks for the new outlook on a very productive plant. My granddaughter has eggs everyday that she has given me and I need to try the limed method for her when they are low. Also, I've never eaten gee but know everyone that has always says how delicious it is. Seems easy enough and I bet would be good over popcorn, also. Another new thing to try.

Hi Mary! Thanks so much for watching. The squash pickles are a little softer than pickles but they’re not too bad. My mom and I ate some while she was here and I sent a couple jars home with her. I hope you’re able to get some eggs saved for later And yes, you need to try ghee! It is so good! It would be good on popcorn. I might have to do that today! Have a blessed day, my sweet friend! 😁

Has anyone waterglassed eggs that are unwashed but have been sitting out for awhile, like a month old? Still fine but I'd like to get them preserved. Do the HAVE TO BE glassed that same day you gather?

I have been adding eggs to a jar a little a day for a week then added the lime water. I am working on a second jar. I don’t think I used same day when I glassed them last year either. However, I don’t know if a month old will work or not. I guess you could put just them in a jar and check them out in about three months and see how they are when broken open. I would love to know what happens! Blessings! 😁

Hi Jane, my better was not salted. I actually have looked up why my Guy is gritty and everything. I read says if it’s gritty you did it right. I don’t usually use it as a spread so it doesn’t bother me too much because when it’s melted, it’s no worries. If I put it on toast or on waffles, which is amazing by the way!, I just make sure they’re hot and it melts down into them. I cut an d pasted this from the web… the ghee has been prepared properly, that the temperature was kept low and the antioxidants have been preserved. Also(I have not tried)… The idea is to melt the ghee completely until it is liquid. To make a solid or creamy ghee-after the ghee is melted, immediately place the jar in the refrigerator to rapidly cool, and leave overnight. (Do not freeze.) Take the jar out of the refrigerator the next day and leave it on the counter-top. Thanks so much for joining our Open Hand Farm family! We are so happy to have you.
