Looks great, but try this small twist. Take frozen hash browns and throw that in the end. It gives the soup texture.

rosemary or oregano for this recipe will give off different flavor profiles with this soup than thyme will. thyme works really well with the other flavors in the soup and you can taste it in the soup as one of the key flavors

Here's a question, can I sub the cream for coconut cream? I ask cuz 1 or 2 of my family members have a dairy allergy and I don't want my first solo hosting a meal to leave anyone in rashes 😅

You can! Any Non-dairy creamer should work considering you like the taste. I tried it and it came out wonderfully.

I would personally use full sodium stock. Using low sodium stock then adding salt seems redundant to me.

Any recommendations if I still wanna use meat, instead of a vegan option for the bacon? Majority of my family is muslim, so they don't eat pork. Would turkey bacon work fine you think?

You have a pretty wide variety of options honestly. Turkey bacon would be a fine substitution in my opinion, but you could also go with shiitake mushrooms, or even smoked fish. Any dense protein will do honestly.

I use the whole leek. I find even the hardest parts of the leeks become soft enough for my tastes. And I don't blender the food. I like it chunky. But then I'm part orc.

Because it tastes basically like potato and onion, I plan on putting ground beef in next time (crumbled and browned) after it is blended....
