Today I made a baked cheesecake with a fresh lemon flavor.
Cheesecake is baked at a high temperature for a short time, so the center becomes melted and smooth like a rare cheesecake.
The standard for baking is to shake the entire mold so that the batter in the center shakes.
It is recommended to refrigerate overnight before eating rather than freshly baked☺.
▷Ingredients (15 cm):
400 g cream cheese
100 g cane sugar
1 whole egg
2 egg yolks
Lemon zest, grated
1 tbsp lemon juice
200 ml heavy cream
▷How to make:
1. Bring the cream cheese to room temperature, add cane sugar and mix until smooth.
2. Add the egg yolks and whole eggs and beat until blended.
3. Rub the surface of the lemon with salt or baking soda, wash and pat dry. Add the lemon zest and lemon juice.
4. Add the heavy cream in two parts.
5. Line a mold with a cooking sheet, pour in the cheesecake mixture, and bake in a preheated oven at 220℃ for 22 to 28 minutes.
6. Remove from heat and refrigerate overnight.
