200g cake flour
25g ground almonds
70g powder sugar
2g salt
120g unsalted butter
vanilla beans
1 egg yolk + egg white = 35g
■Cheese pudding
100g cream cheese
40g sugar
2 eggs
130g milk
120g heavy cream
vanilla beans
■Honey caramel glacage
80g heavy cream
5g honey
10g cold water
2g gelatin
45g sugar

Notes on making this! 1. When placing the crust into the mold, make sure to TIGHTLY STICK the dough together. Mine had a lottttt of cracks and I had to patch them up with a mixture of flour, sugar, and melted butter so the filling wouldn't leak out. And try to cut as little as possible to decrease the possibility of forming cracks 2. The dough quantity is a lot. I had a 21cm mold so i doubled the recipe and I was still able to make enough dough for an 8in tart mold. 3. The cream cheese was a bit difficult to work with so I placed it over a water bath to melt it a bit to mix easier. Make sure to strain it to make it silky smooth even if you think you've squished all the cream cheese. 4. I didn't have the stones that was used in the video so I used uncooked rice instead and it worked perfectly. For those that don't know what the purpose of the stones, it's to prevent the dough from rising and it keeps the shape of the tart. 5. The tart itself was delicious. It had the consistency of an egg tart but the taste of a cheesecake. It wasn't too sweet so it was perfect. I didn't add the caramel anymore because I was worried I might ruin it but even without the caramel it turned out perfect.

I've been following you for the last couple of months and really enjoying your videos. Tonight I copied you step by step. Just put the cake in the fridge to chill overnight. It came out prefect the only thing which amuses me is that I've been left with half the dough in surplus. The filing was exactly as in video, just below the brim, the caramel glaze as well, only i couldn't find a place for half the dough I made. Never mind that, I'll just use it tomorrow for the new cake, just find make filling and glaze.

when you are left with some dough you can just make butter cookies with that dough. just roll it in whatever shape you want and bake them
