I now use a cast iron tortilla press for "rolling out" all of my pastry dough and I can't recommend it enough! You place dough between parchment or plastic and you don't even have to clean the press either. So fast and easy!

My favorite homemade pop tart, that I still remember from decades ago (boomer here) is a pecan maple bacon one. One of the neighbor's mom's made them and there were only a couple of kids on our road that liked them..the bacon freaked em out a little. I think it was a maple cream cheese filling or maybe a maple cooked custard, with pecans. and I know it was candied bacon and nuts on top.. under a royal icing back and forth drizzle on top. No.. decades ago, it was not even close to keto.

I looked up the standard maple cream cheese filling recipe and it should be easy to make keto since half the ingredients already are (cream cheese and heavy cream) and I found a recipe for candied bacon so it should be possible to recreate your childhood ones as a low carb version!

Generally, when making regular tarts, you’re instructed to dip the fork into flour. Perhaps dipping it in almond flour might work. I will probably find out today as I picked about a quart of raspberries yesterday. 😋

I have - using a bit of sweetener and vanilla in my ice water to give a bit of flavor to the crusts. I used homemade alternatively sweetened jams as the fillings. I also glazed rather than frosted because it was too sweet. I have made them several times and even non-keto folks liked them. The crusts need to be returned to the fridge to firm if they get warm and delicate, but that was the only issue.

I am going to try these with Victoria's newest pastry flour mixture and also see if I can come up with a brown sugar cinnamon filling. Those were my favorite pop tarts back in the day of eating carbs. Holy moly iffn I was burning 5000 calories a day I would have indulged in a few pop tarts too 😁

@@Shari-NevadaPuP I have great will power to not touch ONE bite of the old junk! I simply don't do it! I also make whatever treats I need with clean keto ingredients & am VERY HAPPY & content. I make Indigo Nili's egg white breads. AMAZING! Pure protein almost so it doesn't cause cravings; it just satisfies!! Her best ever bread 2.0 or the ones with the shredded butter are The Best!! I can't have dairy so I use frozen shredded beef tallow & just use about half as much. AMAZING!! But Wes ate all the junk for the time of the trip & apparently was able to just shut that window on what happened as if it never happened. He must be a moderator but I am not 😱 I am an abstainer. Even one bite could send me over the edge of a possibly long downward spiral. I just don't chance it. I has happened TOO many times over the decades. I am satisfied with my keto lifestyle & have no worries as long as I stay on my side of the line. Kudos to Wesley if he can cross back & forth with no repercussions. 😍

I've been eating this way for over 20 years long before keto was even talked about but if I see a spaghetti factory anywhere near my vicinity, I'm all on top of it lol right down to the ice cream 😁 and then right back to my keto lifestyle. I haven't tried Nili's bread. I have tried cloud bread so if it's anything like that, yuck. I also do not like fathead dough. It gives me a bellyache.

I can't eat dairy so no fat head dough for me either. vloud bread is not bread imo. Nili's bread is Bread!! I do the kind with the yeast & thanks to Alycia at Keto Upgrade we can even actually raise the bread! Nili has showed that kind too. I do it most of the time with just proofing the yeast first so the flavor is still there but it's faster. I also add the nutritional yeast also, as between the yeast & that, it really is bread. It is as close to real bread as You can imagine!! It can go wrong... if You beat too long, bake too long... But when You get it down. Ohhh La La!! BREAD! Perfect virtually no carb, protein bread.

From Kindergarten through 3rd grade I ate a bowl of Kellogg’s Rice Krispies for breakfast with half & half and one inch of sugar on top, waiting to eat it until the sugar absorbed the cream and cracked all over the top. From 4th grade until 7th grade I had one can of Campbell’s Chicken with Rice soup - mixed with 3/4 can of water instead of a whole can - for breakfast every single morning except on Sunday when my Father made pancakes. From 8th grade until my Sophomore year of college I ate two Raspberry Pop Tarts and one envelope of Mocha-flavored Instant Breakfast in a glass of milk. Every single morning. Since my Junior year of university I have coffee with Coffeemate and no food until lunch. They stopped making Instant Breakfast. It was a personal crisis. 😳😬I can literally call up the taste of the Instant Breakfast and Pop Tart with great longing. This video is going to be my effort to master: Keto Pop Tarts. 😂 Please reinvent Mocha Instant Breakfast now so I can be happy again. 🤪🤣😂🤣😂 (If you detect OCD, you would be correct. Don’t you feel sorry for my Mother, RIP, who dealt with 18 years of the pickiest, most obsessive eater ever?? 🤎😂😂 It may be genetically passed on because God blessed me with an OCD picky eater of my own. I have a brother-in-law who has done the ALC several times. We always went down to the VA Hospital in West LA there to cheer everyone on as they came in. What did you think of "The Evil Twins" and "The Quad Buster"? My BIL said there were some who would do those hills multiple times!

That’s awesome! It was a wonderful experience! Luckily, some of the hills we trained on here in San Diego were equally (or more) difficult than Quadbuster and the Evil Twins. That helped, but they certainly weren’t easy! Haha! (And you’re right… it’s become popular to do the bigger hills multiple times on the ride. Some folks have donors that will give them $1,000 for each time they make it up Quadbuster, so they livestream it and rack up huge donations.) LOL Smart!

I actually have a "pop tart" crimper that my daughter gave me several years ago. The peanut butter one sounds disgusting to me, but that's because I can't stand peanut butter. Not even when I was a kid. I hated PB&J. So, the raspberry ones intrigue me. I'll have to try them out and see if my crimper would work, or if the pastry dough would stick really badly. It also makes them the correct size, so at least they could potentially be more consistent than I could roll and cut them myself.

i would be interested in a COST breakdown of each recipe , then the cost per serving. The chocolate ones have gotto be very expensive. My local stores price gouge Keto items and the Lilly's products are very expensive. Im talking $ 8.00 or more for that little bag of peanut butter cups. In this case, i am happy that the fruit version " won" because i wont be spending that kind of money to make 4 chocolate tarts.

Congrats on finishing AIDS/Lifecycle! I used to volunteer to welcome y’all at the finish line and the snack/t-shirt tents. It’s an amazing event for a good cause!

Wes, I cannot believe we are still doing AIDS fundraisers! I remember when it was discovered, the devastation, Princess Diana trying to end stigma, Ryan White, the death of Freddie Mercury months before treatments were available. More power to you and the charity you raised money for!

So very true. People around my age (49) spent years learning about the dangers of HIV and how prevention was the *only* answer. It seems that now, because of the powerful medications used to prevent and treat it, the younger generation doesn’t fear it as much as we did. There’s a lot of education still needed about what these (miracle) drugs do to your body and how insanely expensive they are! Avoiding it is still the best option - and kids aren’t hearing that message today like we did. My generation and older also remembers losing friends and community members to the disease. Almond flour is very high in oxcalates why u use it?

Not everyone is sensitive to oxalates. And no studies have shown them to be a problem for people with normal digestion. They’ve just recently become the “boogeyman of the day.” (Our gut microbiome has a bacteria called *oxalobactor formigenes* that specifically digests oxalates.) So, I don’t generally avoid almond flour. If you are following a low-oxalate diet for health reasons, you may want to look for a channel that specializes in that, rather than expecting a low carb channel to focus on low-oxalate foods. Thanks for the tip! Should have done that instead of trying the oil. (Others have mentioned cold water on the fork as well.) Thankfully, chilling the dough again helped save my mess! Haha!

there as many diff ways people do keto as there are people doing it. honestly if you cant eat it, then dont. lots of people eat a lot of things that many cant... some have health reasons some dont. also: if you follow one person and just do what youre told without thinking and evaluating for your needs and situation, isnt that just being a follower? i mean..if that guy told you to not watch videos like this...would you still? at least learn to let other people do things differently than YOUR "guru" says...some of us follow others who say differently..and some dont follow any one particular person.

Not everyone eats low carb and keto for weight loss. Many do it to treat illnesses like epilepsy (particularly juvenile refractory epilepsy), depression, migraine disorder, psoriasis, Alzheimer’s, Type 1 diabetes, liver disease and other conditions that aren’t necessarily related to weight or food addiction issues. If eating a pastry treat made of almonds, butter and raspberries makes them happy and keeps them within their health guidelines, who are we to judge? No one is here to shame someone for eating something they like. This recipe IS “real food” with “real” ingredients. It’s certainly healthier and more real than what is in the blue box on the shelves. In the words of a wise old friend: “you worry about what’s on your plate and I’ll worry about mine.” 😉
