There's nothing better than getting the crispiness just right when cooking Korean pancakes. My attempts are horribly unreliable but when I nail a crunchy pancake it's SO SATISFYING! (It's a merciful intervention, an act of God and nothing to do with any deliberate alteration to my frying technique). You and Maangchi are both 100% correct when you say that it's all about the crunchy outside of this style of savoury pancake; it's where all that game-changing flavour is, texture aside. I cannot wait to try your BinDaeTteok this weekend. I have crunchy daikon and carrot pickles to use up so they'd be a great accompaniment. Thank you for your terrific tutorial.

Hi Abit👋. This might be a bit too heavy as a breakfast meal BUT I say, give it a try and you might enjoy it😘. (I know, the word Pancake throws off many non-Koreans.) Pan fried foods are not typically eaten as a breakfast meal for Koreans.

@@ModernPepper Thank you for your replay. as a german guy i like to have a "heavy" breakfast, and this one was great! I can imagine that this is not a Korean breakfast option, but for me it worked. Maybe you could do some videos on Korean breakfast dishes. Would love to see that and try them.

Yummm! I hear that crispy crunch and oooooh ;0) I can't find peeled mung beans here in southern France. What do you think, should I soak them (changing the water 2x/day) until the peels come off, or just blend the soaked whole beans? And bonus question: GwangJang market--that used to be called Tongdaemun, right? Any idea when & why the name changed? THANK-YOU for sharing your tips on how to prepare some of the world's greatest cuisine

Hi Apryl! Soak the beans in cold water. Every few hours, stir, and pour out the water to remove the green peels. Repeat a few times until most of the peels are removed. DongDaeMoon market (more known as the wholesale district for clothes) is live and well. GwangJangMarket is more known for the food vendors, compared to DongDaeMoon market. Hi 👋 There are so many varieties of Korean pancakes. PaJeon 파전 literally means Scallion pan fried patties. This mung bean pancake is called BinDaeTteok or NokDuJeon which is made more as a thick dense cake-like pan fried patties. Unlike PaJeon, which uses mostly wheat flour, BinDaeTteok isn’t made with wheat flour. Both are so delicious😋.
