I found this video while aiming to prepare my own kimchi and I'm really happy I did. You're giving amazing examples with every single step - starting with the softness of cabbage, through the 'yolk glue thickness' and so on. I really appreciate it. since sometimes it's hard to figure out what's in mind of author. I will defo use yours channel as a reference for many other recipies so thank you for such an amazing job!

Helen, I've been patiently waiting for your 미역국 recipe so I'm super excited!! I'm not even Korean, but this soup is a soul food for me, especially served with warm Korean rice, myeolchi bokkeum, and well-fermented kimchi. Hii there. I love your cooking so much. Thank you for sharing your recipe. I just want to point out that when you said how much soybean paste should put in the marinade . You said is half tablespoons but on the written recipe said is 1/2 teaspoons. I don’t know which one is the correct one. Plz advise me. Thank you.

I'm pretty sure most Americans are totally grossed-out at the thought of any food containing "seaweed". That's really too bad. In my opinion, it's right up there with granny's chicken soup on a cold-ish day. Amazon is a great help in terms of finding a lot of these ingredients.

I have a friend who was born and raised in Seoul. Whom has been thriving here in SW Alaska. His version of Kimchi is the best I've ever had, he also pickles and ferments other vegetables to preserve them. Ive tried alot of his creations and to me they are top notch. He has one fridge dedicated to brining and fermenting.

One recommendation for the tofu is to freeze it before using it, the water inside the tofu will expand and allow for the sauce to soak into the tofu better and adds much more flavor. When cutting it, make sure that the tofu isn’t completely thawed out so that when you lay it out on a paper towel, the water drains out instead of being absorbed back into the tofu. I always keep a pack of tofu in the freezer for this reason
