Helen, I always get so excited when you share your recipes for homestyle Korean dishes! I am taking notes! I learned to make this with rice syrup but I thought it was just to make it more shiny, do you think it's better to skip it? I do sometimes find my older recipe a little too sweet and too salty though, so I'll try yours asap. I also sometimes throw in 꽈리고추 for a special version that I serve as a banchan with 된장찌개. The flavors go so well together in my opinion 🤤 Thanks for sharing your knowledge 🙏

Looks great--love these are milk free and will skip the egg as I have a family history of Cancer so need to avoid the estrogen and BLV in dairy and the lead and choline in eggs. Thank you for sharing

could you discuss the reason why korean pepper flakes are grown in China. so much is contaminated there. the soil, and water are not good for humans, which pepper flakes do you use for Kimchi? Korean grown? would really love to know.

I absolutely LOVE this banchan! When I make it, I cannot stay out of the container and I usually finish it pretty quick! The only problem is, the anchovies are so darn expensive, so I cant afford to make it as often as I would like to!

YES, making kimchi is not a quick salad (as many recipe bloggers that are not familiar with authentic kimchi would imply). Kimchi is absolutely delicious and so worth making it at home🙏🙌🙏

I boil for 4-6 hrs in a pressure ccoker but the broth doesnt turn white. Why issit white in the video? Was pork bones used as well?

Hi 👋. As noted, beef bone marrow are used. You can also add beef knuckles and ox tails, too. Instead of a pressure cooker, use a large stock pot as shown in the video

Made these. Let them soak for a week. Tasted like a slightly salty boiled egg. No real flavor. Not sure what i did wrong

Good question. While the bones are slowing brewing, we do not add any seasoning. As noted in the video, once the final broth step is complete (the fat has been removed), then u can season it to taste or make other delicious dishes with it by adding other seasonings and ingredients

Love your channel! I make a version of this using shrimp and scallops. Also use berbere spice, chili paste and sriracha for the heat. Your broth looks over the top.

Thank you for concentrating on noodle cooking technique here. DangMyun noodles are sooooo easy to turn into gross moosh. Once that happens the dish is completely ruined (well, I wouldn't eat it or serve it-- which is exactly how it goes with asparagus and other greens that need to stay brightly coloured and slightly crunchy; that extra accidental 30 seconds on the boil is deadly). Once you master these noodles they're delicious, thanks Helen! I haven't made JapChae in a long while. Your recipe is the one I'll use next time round...of course. 😊

Hi 👋 You can book the noodles in a soy sauce broth. Here is my other Napa jar recipe kzbin.info/www/bejne/iIDGiJ6OZZpqotUsi=3kYFncTWDrhkj4IH BUT in general, then haha is not made to be super dark. The noodles should still look light in brown color (aka still see through light).
