I think everyone had that reaction woods had on this channel. Tanner’s first expensive steak reaction “IS IT CAKE?” then he wants to get up from his chest but gives a wow that was mind blowing moment with a smile. Gotta say Amanda Fey is so nice. Matthias is a lucky man.

I’m not a steak expert yet, but Bryan said something along the lines of, “as long as u cook the outside, the inside can be rare”. Can someone translate into steak maker amateur hour terms, as to how that helps me always have med rare steaks but never parasites. Cause I dont like parasites. But I like steak. Or was he just pulling their leg saying that, and thats why he got cut off?

0:30 Where are you getting your statistic Flat Iron is a well known cut commonly used to make fajitas, it's one of the MOST popular cuts of steaks. The most popular cut is Ribeye easily for it's flavor, the only reason Filet Mignon is popular because it's expensive and you can put a good mark-up on it for a restaurant. It's an overrated cut if you ask any chef worth their salt because it lacks flavor, it does become a vehicle for additional flavors so you can do quite a bit to elevate it, but if you want a good steak for the sake of a good steak it's not a going to be a Filet Mignon it's going to be a Ribeye or a Porterhouse. Hanger Steak is a hard to find steak that people tend to forget about because it's hard to find, even sometimes called "The Butcher's Secret". So if you wanted to be a less well defined steak zone, you'd probably go that route or a Picanha Steak since it's not terribly well known in the States. 1:16 You could just take a pan, put whiskey in the pan before adding the steak heat the pan to cook off the whiskey so it doesn't double cook the steak, but imparts the flavor then add a bit of olive oil to the pan before adding the steak, season the steak liberally with salt and a little pepper and then once one side of the steak is down throw in some garlic, rosemary and a tab of butter and baste until the steak is done. Pre-packaged seasoning blends tend to be mostly salt and pepper so if you know what you like you can season something better than buying a packaged if you just take a bit of time to gather the ingredients and it's 'fancier' to make your own spice blends. Maybe try a black garlic and truffle season to really up the price point if that's the point of the channel. 1:40 You shouldn't prepare the steaks the exact same way, you adjust the method of cooking based on the fat content to get the most out of your individual steak. A steak with less fat can get tough if you treat it as if it has the marbling when it doesn't so people overlook the cheaper cuts of meat (which tend to be cheaper because of the lack of marbling), but you can make those cuts perfectly fine with good flavor by adjusting cooking methods, the same rule applies to lower grade meats that lack the marbling of higher grades. 5:46 Against the grain is perpendicular to the fat, it makes it easier to chew.

@@ella0590 picanha is a favorite in Brazil for good reason, it's flavorful and relatively cheap, but in the states it tends to have a more unappealing name and this gets passed over. Most butchers will call it a rump cap and it tends to not be trimmed so it's sold as a roast instead of a steak. I have issues digesting fats myself so I turn them into very lean fajitas since the actual meat is extremely lean and then I can use the trimmed fat to make tallow so it's not wasted since as a flavor component it's a bit easier for me to eat than leaving it attached to the steak.

@@dwlr007 I’ve always wanted to make tallow, I find it hard to eat so much fat because it seems like chewy jelly to me. I’m not sure if that’s just because of the steak or personal preference, but I’ve definitely had expensive steaks that were not like that so it may be the way it’s cooked. I actually hated steak for the longest time until just recently haha.

@@ella0590 Making tallow is really simple. Take the fat making sure not to get lean with it or it'll make your tallow sour and put it in a pot filled with water. Simmer it for 1-3 hours making sure to NOT bring it to a boil once all the fat is rendered let it cool and that's your tallow. As for eating the fat, no rule says you have to eat it so I wouldn't worry about it and in most steaks it's not really worth the effort to try to find a use for it since you could end up overcooking the steak to make the fat pallateable. It's just with picanha you have such a large fat cap that it just feels like a bit of waste if you don't find a use for it since it can be 1-2 inches thick. General rule if you do try to eat is that if it's chewy and jelly like you've likely not cooked it enough which is fine if you're cutting around it, but when people do eat the fat with the steak like Picanha or New York Strip you want to start your steak searing the fat first which will render it down a bit providing oil to cook the steak in as well as helping to denature the proteins in the fat to make it more palatable. The traditional preparation for picanha where it's most popular (Brazil) is skewered and roasted over an open flame. In this case the fat would be on the outside so it's what would come into contact with the flame and render and char while protecting the meat from overcooking.

Hey Bryan, try ordering from Crowd Cow! I’ve ordered wagyu (A5) and Olive wagyu (A4) from there and they also give you a free lifetime protein if you have a subscription to them! I’ve gotten a few different steaks from them and so far I’ve not been disappointed (although it’s been nearly a year since I’ve last had anything from them!!!)
