As a Himachali(specially from kullu region: the original place of siddu dish) I can vouch that we use home grown walnuts ( nowhere we buy/use the California’s walnut). Also it’s not the traditional way of folding/binding design of siddu. Rest is a good video and close to authentic recipe!

Who said California walnuts are.gold standard? Given by who ? Californians obv. And our influencers are ready to bend forward to accept n promote it. Indian walnuts are sweeter, have better oils, naturally sourced and more ethical than the imported variety

Yes California Walnuts maybe good because all good things are exported to other countries from India 😅 they import it and label it as California Walnuts and resell / export them 😂 back to us and to others... It's like "Meri billi mujhe hi miyoh".

That's amazing that you tried this but siddu is actually fluffy when you cut it you should have a feeling of sponge n some air spaces for that you can left your dough overnight

In Kerala we make the filling with grated coconut and jaggery. The dough sometimes wheat and sometimes rice. But we never use yeast.😊
