I never had Hog Maws, cooked like this, I grewup eating Hog Maw's, but, my Mother cut them up and seasoned them, boiled them, until they were tender enough to eat, years later I moved to California, I ran into a BUCHE Taco, which are Tender cooked Hog Maws, cut up in a bite size on a corn tortilla shell, with Salsa and all the works, they are absolutely DELICIOUS cooked that way. dont forget the Limes, they give the Tacos a extra burst of flavor.

I grew up in Chambersburg, Pa and I loved when my grandmother made this. Years ago before my dad passed away we would go on a golfing trip to Myrtle Beach for a week and one thing he always asked me to bring was some pig belly. I usually made 2-3 for the week. I didn't make it like his mother my grandmother..She made hers with potatoes, onions, sausage and cut up and browned pork chops. I omit the pork chops and use ground pork instead. Gonna make one tomorrow for my brother and I.

Her mom's side was PA Dutch from Menges Mills and Glenn Rock PA - her dad's side was German/English from near Frederick, MD. You inspired me to continue the family tradition - we haven't made one since she passed away.

Raised in Welsh Run....near Mercersburg Pa. Mom made this several times a month...we loved it. The price of stomachs went thru the roof some time ago....I just do the same thing in a casserole dish now....I modified mom's recipe slightly by adding onion and some carrots. Toss everything in a mixing bowl and add a little oil and butter. Cook at 350 for about 75 minutes. I use Hoffmans sausage out of Hagerstown.

I grew up in Hagerstown - and Hogmaw was my favorite thing my Grandma made. Yesterday was Fastnacht Day so I was thinking about her of course! Nanna always went to Hoffman's for her pork as well! And she told me my great grandmother Rhoda was a Hoffman and related to the family who has the meat market. Your modified recipe sounds delicious! Would make for a wonderful breakfast even :)

I know several people that will wrap it in tinfoil to get the shape instead of buying the expensive pig stomach I have tried it this way it's ok but I like the stomach so I continue to do it that way

We grew up on Hog Maw. We always asked for it for Christmas instead of anything else. I would come home to Maryland to visit my family and Mom would always make a Hog Maw. Miss those days so much. Brought 4 maws back to SC with me this year and yes, I'm having one for Christmas.

Make sure to use COTTON THREAD to sew up the stomach. Many synthetic threads will dissolve in the heat. Learned that one the hard way! (Still tasted good though). Cabbage is optional.

I’m originally from Lebanon County PA. My family generally didn’t add cabbage but I knew those who did. Also some prefer sausage meat without casing and others sliced whole sausage. Delicious either way!

Wow there are people out there who know what hogmaw is! I am from Hanover Pennsylvania and when I met my husband who lived in WV he never heard of it. I learned how to make it from my mom and it goes all the way back many generations. We only put onion, potatoes and ground sausage in ours and we have pepper slaw on the side so good. Don't knock it until you try it.
